AMOUNT INGREDIENT
2 Tbsp Thyme
2-4 Cloves Garlic
1 Tbsp Salt
1 Tbsp Black Pepper
.5 Medium Red Onion
1/2 Cup Browning & Seasoning Sauce
1.5 Tbsp Creole Seasoning
1.5 Tbsp Greek Seasoning
.5 Tbsp Paprika
2 Tsp Cumin
1 Tsp Accent
1 Tbsp Ground Sage
4 Tsp Jerk Seasoning
1.5 Tbsp Mrs. Dash
1/4 Cup Brown Sugar
1 Pinch Cayenne Pepper
As Needed Tuscan Herb Olive Oil
2 Tbsp Red Wine Vinegar
2-3 Cups Beef Broth or Water

I’m from Jamaica 🇯🇲 but I live in New York City and I never put my oxtail in the oven before I sure will try it because that looks delicious 🤤
You should definitely try it and let me know what you think! I love Jamaican oxtail, but this recipe is a fusion of Southern style oxtail and Jamaican oxtail but totally different from both. The oven gives it a rich flavor and texture that I'm confident you will enjoy!
Maybe cooking them longer than 2-3 hours on 350 because the meat literally should have been falling apart

I’m from Houston, too! I’ve always cooked mine in the oven, but cooked them 400 degrees for four hours, and they come out nice. I would like to try it your way, with all the seasonings you I use. You gave my anxiety though, because I CANNOT for the life of me, touch raw meat with my bare hands. 😂
You can always use gloves, your hands only add a LITTLE flavor! 🤣😂 j/k

The oxtails look delicious, but my question is where did you get those tongs!! Never seen tongs like that before and they seem perfect for getting up under the food and lifting it up. I gotta get me one!!!!!

I’m doing this on Saturday my guy, I normally cook oxtails on top of the stove with black eyed peas and snaps in the same pot. But I’m going your way this time my guy👍

How come you didn’t sear over the stove then transfer to oven? Do You think it makes a difference?
The searing does make a difference, it creates what is known as a 'Maillard Reaction', which creates another depth of flavor and appealing appearance. I didn't have time to sear while recording, so I substituted with the browning liquid that also adds flavor and color. Hope this explanation helps lol
@@jleats86 I use browning even when I sear, so you're saying that if I use the browning I don't necessarily have to sear? That would be great. I'm making a very large amount for Thanksgiving next week and doing them in the oven. Sure would be a lifesaver if I didn't have to sear all that oxtail, but I want them to be AMAZING, so I just don't know if I should be cutting corners...
Yes and no. Using Browning Seasoning would give you the color and impart some flavor, but it would not be the same as with searing. As I said before, searing creates the Maillard Reaction, which creates a different body of flavor. So, yes, if you don't want to go through the extra effort of searing then using Browning Seasoning is a great alternative, but for the absolute best results possible, if you have time, searing is recommended.

If you let it marinate with the added salt it would turn out salty but if you cook it right away the flavor turns out nice and not salty at all
