My Italian mom would sweeten the ricotta cheese with sugar. The sweetened ricotta would add tremendous contrast in flavor with the GRAVY! Not too much sugar. Our dinner guest were amazed at the flavor!
As a child of a American Italian home, please don’t rinse the shells! I drain & place them on a parchment lined baking sheet to cool & stop cooking. Then they are just right to handle & fill! We love this dish & have it each Christmas Eve with an antipasto! Merry Christmas everyone 🎄
How come you recommend not rinsing in cold water? I came across a few videos before this one instructing that we do 😅 and I just would like to know why they do the opposite
PASTA COOKING HINT!!! When baking pasta, cook it for HALF the suggested cook time on the box and even if you think its not done enough the pasta will be perfectly al dente when your dish is done. Don’t be stingy with the marinara remember the pasta acts like a sponge in the oven!! Happy cooking everyone from this crazy Sicilian to you’all!!
i have made stuffed shells so many times and tons of different pasta recipes. tonight i made some stuffed shells and with your tip , which i’ve never done before, and now i have a whole dish of hard undercooked stuffed shells 😭😭😭 i can’t put in any longer or it will burn its already started. so sad and i was in a budget ! definitely do not recommend this tip !! ive always followed his video exactly and came out with amazing shells. wish i would’ve done that this time 😭

Splendid recipe! Pro tip from an amateur: sprinkle just a bit of mozzarella and parmesan on the base layer of sauce before layering with the stuffed shells. Second tip: the chef used Rao's marinara sauce which can cost upwards of $10 a jar. It is very good, but a simple 4 ingredient marinara you can make from scratch costs 75% less and is just, if not more, delicious. Ingredients: One 28 oz jar of San Marzano peeled tomatoes blended until just short of perfectly smooth added to 3 cloves of minced garlic sauteed in 3 T EVOO. Season with salt, pepper (and a bit of sugar if you are so inclined). Bring to a boil then simmer until just thickened (20 minutes or so). The last five minutes of simmering, add 8 leaves of fresh basil. Remove basil before proceeding with the recipe. Thank you so much for all of your great recipes!

I haven't had stuffed shells in ages. My great aunt had a recipe for spinach stuffed shells. It's basically the same recipe except using spinach to replace some of the cheese. I made it for company and at the last minute my SIL informed me her brother hated spinach. He ate one to be polite then asked for a second serving.
I’ve been watching these videos for ages and only now realized John is left handed. I’m left handed also but learned to cook from my mother in the 70’s and since can openers and other kitchen devices are generally right handed I learned to chop and do my kitchen tasks with my right hand.
I sub out cream cheese for ricotta since I just can't STAND ricotta! I also find breadcrumbs work well in the cheese filling. I got lazy last time and used my stand mixer for the cheese filling, working in half batches at a time and it worked just fine. The best part of this recipe is that it makes many MANY meals, perfect for freezing, thawing and reheating.

I’ve made this multiple times now and my family adores it! I’ve made manicotti in the past but prefer the jumbo shells as they’re so much easier to fill (I use a piping bag which I always have on hand) and manicotti shells are floppy and awkward. It’s been awhile but I’m actually making this tonight for dinner lol! Thanks for another great easy recipe. You’re my favorite TH-camr! ❤
OMG I made a double batch today and your stuffed shells are totally totally totally amazing. I thought it was going to be too salty but the sauxe I used, traditional Prego, which is sweet, counteracted the salt and it is fantastic. I love this recipe and have cooked it several times. However, I’m not able to get the jumbo shells so I substitute the biggest shells I can find. It’s still very delicious!

Please teach us how to make horchata! I remember your mom is from Mexico. Does she like it? Did you grow up drinking it? I’m from the U.S. but I’ve tried it and I love the flavor. I stopped at a gas station once while traveling that had “frozen horchata” in one of those slushy machines. I’m sure that stuff wasn’t authentic at all but I always wish I could have more 😂
I use 5 or 6 different cheeses...to my ricotta, a few eggs, salt&pepper...some herbs...but I put a spin on mine...I make some Alfredo sauce to go on the top but first add some cheese mixture to the Alfredo Sauce...I put a good layer of marinara sauce on the bottom add my stuffed shells then I pour my Alfredo Sauce mixture over the top then some Baby Spinach and put a few dollop of marinara sauce last but not least Parmesan and Mozzarella.....tho I use a smaller shell basically they are one or two bites...I get them at a Italian specialty shop...don't make them often because they are immensely rich.!

To get even more flavor from the parsley. It says that fresh herbs should be torn apart, rather than chopped. A lot of the herb oils are left behind on your cutting surface.
I have lots of recipes of yours saved to try and make hopefully soon but this is the first and it turned out amazing. Family loved it. It will be a repeat.

Looks delicious. You can also try omitting the Italian seasoning and use freshly grated nutmeg. As a first generation Sicilian, that what we do.

Kroger finally got the shells in last week. Been out fir months. Bought two boxes. Fixed it last week. But added Italian sausage to sauce !

A classic! Yum. I put my ricotta in a ziploc and cut a small corner of the bag and fill the shells that way, so much faster.

No need to precook the shells, you can pop a lot of sauce over dry shells and pop it in the oven. The shells will cook in the ample sauce.
