Ever since then I’ve made my ricotta filling with a bit of sugar, and it is so delicious. It doesn’t taste sweet or anything because you don’t put in that much, but it really brings out the flavor.
@@eha440 I used vanilla in a lot of dishes, both salty and sweet. Vanilla is awesome. For one of my exams I made Vanilla chicken in vanilla/curry/rhum sauce, with orange gel and goat cheese gel, with rosemary basmati rice. Vegan version for me - chickpeas in vanilla. Delicious!
Hiya John! Did you know that you do *not* have to actually boil the cannelloni (manicotti)? This also avoids the pasta splitting, sticking, collapsing, etc. Just fill the dry tubes, and the alla marinara will actually cook the pasta perfectly in the oven. Just make sure it's covered appropriately with the sauce, wrap in foil 350F for 50 min, remove foil and add cheese topping and let bake 10 more minutes, voila! 🥰
What I like about this recipe is that the filling looks fluffy and not mushy and melty. I've tried a number of John's recipes and have not been disappointed once. I'm looking forward to trying this one soon and also looking forward to the new cookbook.

My mother always made her own crepes to make manicotti. We'd make a day of it and freeze it (without the sauce but filled) in batches. Easy peasy then in the future to take out, add sauce and some cheese on top and eat!
This is something that unless you are Italian, I don't think you know about. Post your recipe for the crepes as I think it may be different than the French version. I bet a lot of people would like to try this.
A little fresh grated nutmeg would be a delicious addition or lemon zest. I make something similar to this recipe (I'm in Australia) instead of fussing with pre boiling pasta and using a piping bag, I use fresh lasagna sheets and wrap around the filling. Any leftover fresh pasta trimmings freeze and can be tossed into soups and casseroles at a later date.

When i have a few leftover i make a single or double serving in a disposable oven tray and freeze it. I can then give it as a gift for a senior or a new Mom etc. 😊

Actually making manicotti for this coming Easter 🐣 I make my own shells from scratch, I’m Sicilian…..it’s in my blood 😊lol. You can also stuff large shell pasta in the same way. Btw, love that large bowl you were mixing the ricotta in, is it vintage?? It’s beautiful. I have a large collection of over 40 vintage bowls in my kitchen…..yep, I have a problem 😂lol.
@@jeanineskitchen2607 , I grew up with my mom making homemade manicotti shells, never had store bought shells. It’s a pretty easy recipe, flour water and egg. Like a very thin pancake batter. Pour small amount in small heated greased iron skillet. They are almost like a very thin crepe. Cool on rack, then fill with ricotta mixture down the center of the flat shell…..then roll up into a tube. Place in pan, cover with sauce. Place pan in 350 oven for about 30 minutes, so soft and cheesy 😋 yummy.

Make them REALLY home made, make your own pasta. Just use your noodle recipe and you can even add spinach to the pasta dough. Cut it into 3X4 rectangles, boil for 2 minutes remove from water place in a bowl of cold water. Then fill your manicotti by placing filling in the rectangle and roll up, overlapping a seam on the bottom, place in a baking dish with sauce on the bottom, then top with sauce and cheeses and bake. I got frustrated with broken store bought manicotti. This was my solution.
Whenever you're adding eggs to a filling, put them in first and scramble OR move the filling to the side, add the eggs and scramble. This way it's more evenly distributed.

Never thought to use a piping bag to fill the manicotti. That is a great idea. The hassle of filling them with a spoon is why I rarely make them.
I made this with bolognese instead of marinara sauce and it was amazing🤩, my new favorite lasagna recipe.

You aren't seasoning enough. Garlic, salt, pepper, parsley, basil, crushed red pepper, tons of freshly grated parmesan.
