Vey good, you are missing caldo de mondongo, fanesca, caldo de pata de vaca y yaguarlocro which are some of the most unique and delicious Ecuadorian soups.
For part two I would suggest one of my favourite, Sancocho de hueso blanco, in Guayaquil, it’s a meat broth with green platain purée, lots of lemon and encurtido from red onion. It is so soft, and very different from the other soups made with verde.
Great video as always. Us ecuadorians really love soups! We would call the one made with unripe banana “Repe”, and the other one next to it “Sopa de arveja” or pea soup. The toasted bow tie is very typical to have at home made by moms. Ensumacao just as Encocao are actually spelled like that, no need for an extra D in there. In 40 years I haven’t had the mocho lamb soup yet! I enjoy watching you eat almost as much as I enjoy eating mysel! Haha.

Yummy 😋 Ecuadorian soups 🍲 viche from manabi it’s delicious the best 🤤 parihuela in Ecuador its sopa marinera but some people called parihuela wich is a soup from Peru 🇵🇪 but taste totally different … I love caldo de pata 🍲 caldo de gallina uff sancocho loveeee it and locro de papa, 🥑 👌👌

@@ayngelina Yup! Officially here full time as of March 30th. And completely agreed! The food is one of the main reasons we chose Cuenca. It's phenomenal. Also, wanted to add, it's been driving my husband nuts that he couldn't figure out a soup he tried and loved. On review of your video of the different soups he figured out it was Caldo de Bola 😁
Wait he doesn’t love encebollado??? Has it had it on the coast? I know Ecuador is small but I only eat seafood on the coast, especially as in the Andes they often use catfish in it instead of tuna.
@@ayngelina So far we've only tried encebollado in Cuenca at a couple of places and it was pretty fishy tasting. I'm sure there are good spots for it but we've not found them yet hahaha
Noooo encebollado is not to be eaten in the Andes! Please try it on the coast, put some lime on it and let me know what you think. I never eat seafood in Cuenca, I don’t care what anyone says about it coming in fresh, as someone who grew up on the coast I only trust other people who grew up with seafood to know how to cook it.

You will find some similarities with southern Ecuadorian food and northern Peruvian food. And some dishes may be similar but they have evolved differently due to ingredients. While Peru and Ecuador look small they are quite large and diverse so the food you find on the coast is different than the Andes, different than the Amazon.
