While at a "Good Will" couple months ago found a nice set of German Henckels, "Fine Edge Synergy" 8" chef and 6x steak knives. According to Amazon probably $400-$500 new. 😀 $12.99 now used. Found another 8" Henckels "No Stain-Friodur" $0.99 Amazon value $99.99. Haven't yet found a decent Chinese Cleaver in Atlanta. But in late 1990's bought at yard sale in Atlanta a 10 inch Swiss chef's knife by R.H. Forschner Co. Victorinox ("Swiss Army Knife 🔪?), couple $bucks.

Why when I did it the skin is soggy
Moisture generally prevent the skin from crisping up. Would try to pay it fully dry before air frying it. Hope this help
