You actually don't need the coarse salt at all! I did it using a different recipe, similar steps here except the coarse salt on top of the skin for the 1st bake. Turned out beautifully crispy. 👌
Hi, salt is used to dry up the pork skin to make it more crispy after frying. The coarse salt was chosen instead of fine salt, because coarse salt will not make the skin salty and it is more easier to be removed as well. Hope this helps and thanks for the comment😊

Actually there is many way of making roasted pork belly😊. Sometimes I will just keep the pork belly at the fridge (no cover) to dry for 2 days without adding coarse salt, as long as the pork skin is dry enough to make it crispy.

Has your meat already been scored prior to you poking holes? What is the difference between your large holes and other recipes' small holes, using nails or tooth picks?
The meat was not scored prior the holes poking process, and it is best to use something firm and sharp(small knife) to make proper holes into the skin for better end result.

Why do you use oil when you should use lard. That's what the pig is made of.
The world is waking up to the dangers of these awful oils.
I totally disagree with the final bed of salt because you had seasoned the meat with enough salt and spices at the beginning.
The meat look very dry.
