Thank you for this video. I started cold smoking salmon and other fishes over a year ago and notice that the Sockeye is a bit different than the other types? My first attempts came out great using a fattier salmon, and though my preference is Sockeye, the last two cold smokes of Sockeye were too salty, and the texture is dry not silky so I can't really get that transparent super thin cut. I used way much more salt in the cure, which worked fine for Faroe Island. Also, I didn't give the fresh soak long enough looks like. 30-40 minutes worked on Faroe, but not enough apparently for Sockeye. I think you might have saved me a lot of detective work and trial and error, so again thank you. Strange that the Sockeye would be that much different, but looks like that's what is going on. Cheers!
Great video! I've done the same thing with Wild Sockeye from Costco. $9.99/LB Cheaper than the farm raised! I dry mine in the fridge overnight to get that pelicle. I do it on my weber using only a pellet smoker tube. Love it!
Nice! The tube works great in cool weather using the weber. Watch your temp in warmer weather that smoke tube will still take you over 100deg and spoil the fish.
