right?! like when people say "I'm Italian (for example) so I'm the authority on what's authentic to my entire country". besides who cares what's authentic? whatever tastes better is fine with me. fusion food is some of the the best around. Vietnamese food wouldn't be what it is today without French influence and it's delicious!
Donal you are a genius. I never thought to add pesto to the Besciamella. And in the store it looked like Barilla had some nice looking lasagne squares. Now I am inspired to make up my vegetable mix always keeping it simple. Thanks for the inspiration.

Traditional pasta Ligure (from the pesto Region, Liguria) has Trofie pasta (or bavette), pesto, green beans and potatoes so this lasagna take on the classic looks brilliant! lovely and look forward to having a dinner party to pull it off! :)

I've never heard of potatoes in a lasagna before - isn't there a cooking rule that says that you only prepare dishes with one sort of carbs? Anyway, that sounds delicious and I will give it a try! I mostly make lasagna with a combination of tomatoes and courgette, both finely sliced, and instead of a white sauce I tend to use a cashew creme made of 1 cup cashews and 5 cups water with a broth cube added. In autumn, I also love lasagna with pumpkin and apple or celeriac and apple

I make a traditional Lasagna taught to me by an Italian Granny. With Italian sweet sausage cut and browned in place of meatballs & lean ground beef in a red tomato sauce (heavy on the garlic), layered with ricotta, mozzarella, and parmesan cheeses, it is delicious but not at all "heart healthy." I'm going to try making your version very soon, Donal. Thank you! :-)
Potatoes and green beans are very often served with pesto pasta so this is indeed very traditional, but in lasagna form! ;) (don't mind the purists, I'm italian and I do appreciate some twists on classic italian recipes!)

Authentic Italian food doesn't exist. I have 2 friends that come from Napoli and one of them gave me his grandmother's (very detailed) recipe of Ragú Napoletane. I cooked it for the other friend and he felt really insulted. It looked, smelled and tasted nothing 'like the real thing'. Honestly, I wish everyone would get hyped up over food like that. In the Netherlands anything and everything comes from packages or is a fake substitute. Make a fresh tomato sauce and you're a culinary genious in my family.

It is a topic for veeery looonng conversations in Naples. No wonder your friends had two different recipes in mind, the oddity is that your second friend acted as he didn't know others make it differently. Jumping to the conclusion that "there's no authentic Italian food" because of this is not correct, though. Just like it is not correct to say "the Earth is flat" because you see a flat horizon.
I know that you said it was given to you by an Italian, but if it wasn't who cares? Isn't that the whole points of having cooking shows in youtube? To have new ideas and takes on traditional authentic recipes! It's 2016, if people are looking for traditional authentic recipes then maybe they should go and check out old books or ask their grandmas 😂. Amazing recipe, definitely gonna try out on my next cheat meal. Keep it up.
If you want to make it VEGAN look for a cheese substitute rsrsrsrs vegetarians usually eat cheese. Good try though. Once my oven is fixed I1ll definitelly try this : D I'm salivating over here!

Why parmesan cheese is not for vegetarians?
Because it contains animal rennet. You can find Parmesan which has vegetable rennet, making it suitable for vegetarians.
