    I made this for my family. Being a lifelong vegetarian and Italian cuisine enthusiast, I can safely say this was one of the best lasagna I ever had ! It was healthy and it was polished.

    I made this lasagna for a potluck with all my friends and we loved it! I also love the idea of pulsing the veggies with ricotta cheese. So good, so easy, and definitely will be making again. 😊

      I get this comments was from a while ago and you might have already made her this but if you make it again leave out the parmesan as it's non vegetarian. (It's made using remnant which comes from the stomach lining of calf's)

    That does look delish 😋. The last time I made a veggie lasagna I put bell peppers, zucchini, mushrooms & squash, onions, garlic etc. I'm gonna have to try this one

    Very nice recipe, will surely make it.
    One tip…coat some oil on the inside the foil, so even if it touches the cheese, it won’t stick to it

    I usually will make my meat sauce with tons of veggies added to it but seeing it added to the ricotta mixture makes me want to try it that way. This recipe would work for meat lovers too by just adding meat, and it gets veggies into kids who wouldn't normally eat it if it had chunks of veggies. Thanks!

    I once had this veggie lasagna before and it was absolutely delicious. I loved it so much, that i had a second plate. I wished that i had the recipe to make me some, and now i could. Thanks to you for sharing the recipe.The veggie was minced together like yours with the ricotta cheese. I was so amazed of how good it was. I like the veggie cooked like yours and then finely minced with the ricotta. Instead of big chucks of veggies in your lasagna. I can't wait to try this recipe. This is the best vegetable lasagna on. TH-cam that i have ever seen.😋😘😍😋🥰

    Very good Lasagna! Maybe it is because i am french (canadian) but I think it miss herbs. I add a bunch of fresh parsley in the blender with the Ricotta and oregano in the tomato sauce. Normally I would have add basilic but I did not have fresh one.

    I went all out and made my own marinara from your other recipe video and went with San Marzano tomatoes. I totally skipped the spinach cuz i forgot to get it but doubled on the zucchini and my goodness it was delicious!!! Oh also i did add a tablespoon of sugar to the marinara to cut the acidity of the tomatoes . Not making any other lasagna recipes ever!! Thank you for sharing with us!

    This looks so good. I am going to try it. I always use the regular lasagna noodles but I never boil them. They cook up just fine as the lasagna cooks. I have never tried the other noodles but due to the fact that I am now down140lbs thanks to the medical marvels of weight loss surgery I am am making better choices and will look at different types of pasta noodles plus the smaller ones that are no boil are smaller which will be good to make smaller pans of the stuff. Lasagna is my favorite food of all time and when I used to make it I made a huge pan of it. I still plan on making it but just in smaller pans and more healthy ingredients. Thanks for posting this video. This looks really good.

    Thank you, coit. I make lasagna frequently; but this tip, to blend ricotta cheese with vegetables, is useful, and innovative, and must be easy to work with. I am sure the lasagna will taste better.

      Oh no... Did you leave out the parmesan cause it's not vegetarian friendly. It's made using rennet which comes from the stomach lining of calf's

    Made this (including Coit’s marinara from scratch) it was AMAZING, not bland whatsoever, one would think cuz the recipe only calls for salt and pepper for the veggies, man was I surprised…. the flavor comes from the sauce and the cheeses used but mainly the marinara…..Everyone loved it.

      Oregano NEVER goes in lasagna!! Or red sauce in general unless it’s pizza!! You would be surprised how much flavor the parm brings layered throughout. If you’re using canned/jarred sauce that already has garlic, that would probably more than do it. Italian flavors are very light and there’s no meat that will hold up against much more. Maybe a little garlic powder in the ricotta but I wouldn’t go beyond that. Traditionally we just mix the ricotta with chopped spinach and pepper, all the flavor is meant to come from the sauce!! Only see heavy seasoning when americans make it with flavorless jarred sauce and ground meat
      Came for a fresh idea, and this looks GREAT!! I’d say give it a try, I bet you’d agree.

      NO MEAT!. This is not fit for Human consumption. Red meat has multiple essential nutrients that you NEVER will find in plant garbage. There is absolutely nothing healthy about this, essentially spinach which is full of oxalates and iron that cannot be absorbed by humans.

    Is this 425 F degrees for fan forced oven or conventional oven? My top layer cheese does not go golden when set 220 Celsius degrees (=425 F degrees). Thanks.

    What size casserol dish, please?

      I think you have more OCD than the Chef.
      It seems the size is little bigger than 3 strips width of No Boil Lasagne. Buy that product first and then buy the casserole.
      If you dont find that product then any casserole size will do.
