"BURONG HIPON" PERFECT RECIPE

    Burong Hipon/Isda is a well loved dipping sauce/condiment for us ilokano's or from provinces of Northern Luzon. It is best served with any fried fish or steam vegetables (e.g. Okra, Eggplant, Kamote Tops - (sweet potato tops). so, here's my version, please watch, like, comment & share. God bless everyone!
    For making Burong Hipon
    8 cups rice
    1/2 Kilo Shrimp
    4tbsp vinegar
    2tbsp sea salt (for soaking & washing shrimps)
    3/4 cup sea salt (for fermentation)
    For cooking:
    2 cups Burong Hipon
    1/4 cup vegetable oil
    5 cloves garlic
    2 medium size red onion
    1 big thumb ginger
    2 Big size tomato
    Black pepper (optional)

    To those who hate buro, please try this one and you will not regret it. I was once a huuge hater of buro but this one changed my mind.
    I suggest din na lutuin siya in small pieces/batches para medyo masunog siya ng konti. Crispy buro is so damn good.

    naalala ko nuon una akong nakatikim ng buro sa nueva ecija d ko gusto ung amoy at lasa pti ung itsura...pero katagalan masarap pla sya sa pritong isda pati nilagang talong...ngaun lagi ako nghahnap ng buro tuwing ngbabaksyon kmi...sana meron d2 sa JAPAN...mahirap pla gwin yn pg winter d2..

      Update: I finally tried it. Got it from a friend from Pampanga. Definitely different from Bagoong hahah the taste actually reminds me of Taiwan's stinky tofu but better.

      No po wag po lagatly hindi po siya mafe ferment...after po ng fermantation days if di mo pa lulutuin pede mo lagay sa ref. Pls try to ferment it for 5-7 days only.       Hi Omar, okay lng po ang iodized salt as replacement but maybe u can cut the down the salt measurement di ko kasi sure if mas maalat un iodized sa sea salt. Anyway if iluluto mo na siya pede ka naman maglagay uli ng salt. Try to ferment buro with in 5-7 days po. If maasim na ang amoy within that time...pede na siya iluto.       Hi ritz Garci, pag maasim na amoy ng binuro that means fermented na talaga siya at pede na siyang iluto..di ko lng sure bakit siya nagmolds..kasi un sa akin hindi naman siya nagmold. try mo po lutuin ng medyo matagal (alalay lng sa apoy) since nagmold na siya. Pero tanggalin mo muna un part na may mold bago mo lutuin. Next time try mo gawa uli pero 5-7 days mo lng siya i-ferment and check din un place kung saan mo siya ilalagay baka mainit po masyado un lugar.

Yung result ng luto q medyo na.dry ng kunti, pro ayos lng nilalagyan q nlng xa ng kunting water pag ininit q. First timer sa pagluto ng buro eh. Hehehe, pro ok nmn kinalabasan. Nilagay q po xa sa kitchen,open cabinet nmn..d nmn mainit at malamig. Sakto lng po. Try q po nxtym 5-7days, f maubos po ung buro. Hehehe..maraming slamat po sa video nyo at reply. (Cebuano nga pala aq,kaya d marunong ng buro. hehe)

      Pede po iref un iba...pls check niyo after 6-7days ng fermentation ng buro.. pag maasim na un amoy ng buro..that means pede na po siya. If hindi pa then continue to ferment po maximum 10days.

      Anong klaseng amoy po? Dapat pag luto na po siya na nabili..dpt hindi po siya mabaho...pero normal lng na may dikit na amoy sa kamay pagkumain po na nakakamay 😁 magpahid po ng lemon sa kamay pagkatapos maghugas ng kamay...Salamat at ingat lagi diyan sa germany kabayan 😊 God bless

      Hi ms imelda..hindo po..dpt sa medyo malamig at dry place siya nakalagay, .Minimum fermentation 5-6 days after that pede mo na lagay sa ref if..yun ginawa ko eksaktong 10days then tsaka ko niluto then nilagay ko siya sa ref.       If nag-amag na siya that means baka sira na siya..dpt kasi di siya magaamag (baka masyado pong mainit un place kung san mo siya finerment or baka mainit pa pp yun kanin nung ginawa mo un buro?). Kelangan kasi sa medyo malamig na lugar or parte ng bahay mo siya ilalagay. Try mo pong tanggaling un part na may amag at kung hindi po siya mabaho..then pede mo nang lutuin. MINIMUM days to ferment 5-6 days po.

      @@MaureensKitchenDSingingCook it is important to know that mold or amag is a spore that requires water, food and oxygen to grow, without any of these three it will not grow. kapag nagbuburo tayo the food and water are already present, mold will form if there's an adequate oxygen. So make sure to properly seal the jar to keep oxygen out. Also, molds tend to grow faster in a dark environment where there is less or lack of UV rays so it's best to store your jar in an open and cool area not inside kitchen cabinet or refrigerator. More importantly, it is not recommended to eat or consume food that is contaminated with mold. Although mold can be killed by cooking, molds secrete harmful toxins known as mycotoxins that can withstand extreme heat and acid. In other words, you can kill the mold but the toxin will still be present which is harmful for human health. So I suggest not cooking it anymore. Anyway, thank you for this video. I really like buro especially this one you made. :)

      Hello po if may konting amag na tanggalin mo na lng po un part na yun at lutuin mo na po and try to cook it a little longer (medium to low fire para di po masunog). If mag try ka uli gumawa niyan..ferment mo po lng po siya for 5-7 days pra maiwasan ang pagmolds. Yun sa akin po kasi exaxtly 10days pero di naman po siya nagmolds.

    Bkit po yung ginawa ko kumatas sya. Nilagyan ko ng cling wrap tapos sa 3rd day kumakatas sa cling wrap parang gustong lumabas nung katas nya sa loob.

      I sealed mo lng po mabuti may tendency kasi po na magkatas kasi nasa fermentation process siya eh...try to ferment lng for 5-7 days and check if maasim na siya that means fermented na siya 😊
