Some add Passamaquoddy and Fish Sauce.They add Uami flavor. Omit soy and replace with Fish Sauce( fermented anchovies-think Cesar Salad or Worchestshure sauce). Omit dill and add Galanga( diced finely un food processor or mortar and pestal( add more or less depending on preference). So your Passaic isn’t really a waste.

How do prep the casing
I brought casing from Asian market. I just rinse them with cold water at least 3 times to remove the salt.
