    Found your recipe last week and made it twice since. Easy instructions and great results. For my personnal touch, I added the zest of 2 lemons to the sugar and let it rest for the night. The next day, I heated the lemon juice and sugar (and zest). I strained the preparation before adding to the eggs. Voilà! I will not go without lemon curd from now. Thanks chef Berry.

    Made this tonight using 1 lime 2 oranges and a handful of lemons. I followed the method to the latter and spent a good 10 minutes with the whisk till I got lines, then added the butter after I took the curd away from the heat. Its a great method and one I will use again. Thank you!

    OK...I just made this and it is CRAZY GOOD! My lemon juice yield was about 1oz shy but I added some lemon zest to compensate for flavor and hoped for the best. It came out awesome! Thanks for the recipe and the tutorial.

    Yes you can make orange curd in exactly the same method, and adding zest adds falvour too, one whole orange zest is enough (I use 4-6 lemons depending on size for lemon curd) , but use the same quantity of freshly squeezed juice. This is a great recipe and method.

    So I did some Curd (not this recipe exactly, tho) and its mostly fine but when you taste it you get a little bit of a mayoneise taste, for the first moments at least, then the sourness of the lemon kicks in and you get the curd taste. Did I mess up the proportions?

    I just made this I had it go to rose stage and then it went to a liquid stage so I had to add corn starch to get it thick again why would this happen.

    • @duzzitmatter8679
      @duzzitmatter8679 3 ปีที่แล้ว

      I think either it wasn’t stirred enough (inducing air into the mixture) or it may have been too hot and it “fractured” the mix. How long did you leave on the double boiler?

    I made the lemon curd following exactly his indications but for our palate It was way too sweet and lemony that I had to bin the whole lot 😭😭. The texture was lovely tho and it set perfectly, so very happy with the procedure he did. I’ll do it again but with half the quantity of lemon and sugar.

    I've made 7 or 8 lemon curds from TH-cam, this one is probably the worst of them. Its ok, just doesn't pack the punch that the others ive made have had. My favorite is from an Aussie guy called "the one pot chef". It was his Nans recipe and it's awesome!!
