I stumbled across Mr Kirkwoods roll recipe after having a few disappointing results from a bread making book. The book is currently off to the charity shop as this recipe is by far the best. Thank you Mr Kirkwood absolutely outstanding

I followed the recipe exactly and these rolls were fantastic. I was making some fried chicken for sandwiches and made these for them. I was the perfect roll for the chicken. As there is no sugar in these rolls, there was not the sweet taste you would get from hamburger buns (in the USA) and the other seasonings on the chicken, mustard, pickle, etc. were able to stand on their own. Great recipe, John. Thank you for sharing it.

Outstanding recipe. Note, I used plain all purpose flour with 3 teaspoons of vital wheat gluten and a teaspoon of malt powder. The most important ingredient: patience!. Absolutely fabulous rolls, so soft and airy, perfect for sandwiches, or just plain with some butter. We used them for dagwoods. Speechless, how good they were. Many thanks for this one.

Just made these, left the dough to proof in the fridge overnight then continued this morning, they turned out fab. I use my Monsieur Cusine to kneed the dough, very happy with the result.

Made these rolls for the first time today. Got my Magimix out to do the initial mixing and then keaded for 5-6 minutes. Shame I can't put photos on it rose wonderfully. Followed your instructions to the letter. They have turned out fabulously! Just had a ham roll for my tea. Taste as good as they look. Thank you John for your wonderful vids.

OMG John been following you for a while and everything I have made turns out 100%. So easy with your exact weight measurements and detailed methods. I live in Thailand and things like crumpets, muffins and special breads not easy to come by. These soft dinner rolls are just out of this world. Made 8 this morning....had 2 for lunch, 3 for burgers at dinner and will be making more tomorrow lol. Be a staple in my freezer from now on. Thank you so much 🙂

What a fantastic recipe & video! I've been making Scottish Floury Baps for quite a few years now, but these are even softer! I made them yesterday & the first rise was fine. But the second rise took at least twice as long! I live in Greece & my kitchen is cold (only about 19C) now that winter is here, so I do the first rise in my oven with a hot water bottle on the bottom & this works fine. I haven't got enough space in the oven to have a hot water bottle plus 2 shelves for the second rise .So I've always put the Scottish Baps in tented plastic bags in the spare bedroom with an electric heater on, which worked fine. Yesterday I put thin tea towels over them as per your video & put them in the heated bedroom as usual, but they took sooooo long to rise. They baked really well & were lovely & soft. After cooling, I froze them & we took two out today for our lunch.....wonderful. Just wondering if you have any idea why the second rise took so long

Yet another easy recipe, due to shortage of yeast tried a different one. Vac packed looked like coffee pack, open up to beautiful fine yeast possibly the nicest taste. My oldest granddaughter now makes fantastic bread thanks to your videos. Thankfully another generation of bakers.

Probably just made my twentieth batch of rolls. Decided with the great heat today (in the 30's in Buckingham!) to use cold water out of the tap instead of lukewarm water. It worked just as well, so I'm very pleased. They turned out just like the other batches I've made - brill. Bought a 16kg bag of canadian strong flour and it has been wonderful. Great videos John. I don't use a machine and have got the kneading down to a fine art. Between 5-6 minutes kneading to the dough becoming smooth and no longer sticky. Always do the full 10 minutes kneading. Always weigh the ingredients (water too). They never fail.

Thank you for the video. I don't own a kitchen scale, but the calculator says 500 grams is about 4 cups. I've found with other weighed recipes that stirring my flour then using a "scant" measurement it seems to work well for me. I've made lots of yeast bread/rolls from different recipes over the years, but was never happy with the texture of my bread/rolls. I'm trying yours today! The texture of the dough is definitely different... not nearly so sticky or soft. Thank you again. Hoping the rolls come out as nicely as yours did.

Hi John, just bought my first stand mixer and decided mixing the dough for these rolls to be my first trial. Never having baked anything before the last few months. This recipe is just marvelous! I followed the recipe exactly using an artisan bread flour and the results were stunningly delicious. For the second batch, I'm going increase the hydration a little bit (5%) and extend the rise times a bit in hopes of getting just a little more size and lightness in each 100g roll. Thank you for a real winner!

Tried these today for a buffalo chicken sandwich and they were amazing. Even better than the local bakery. My Dad used the extra's for burgers and he thought they were the best buns he's ever had although I prefer Johns hamburger bun recipe for that but to each they're own. These were amazing light and fluffy especially for how easy and relatively quick they were to make. Simply fantastic. Thank you chef John. Hello sir, thank you for this delicious recipe. I have one question though, once I flattened the balls and put them on the tray they didn't rise even though the dough did triple in size the first time around. What would you reckon the problem was? Thank you
Same here, I've made them twice, the first time they turned out fantastic but the second time the second rise didn't happen so I ended up with smaller firmer ones, I used fresh yeast and tested it in the water mentioned and added a teaspoon on sugar. Both times the dough was really sticky it wasn't like in your video. Any suggestions on the rise and stickiness?
This recipe is so easy to follow, easy to make and they turn out perfect every time! We are in Bulgaria and although the bread is lovely, we cannot seem to find a soft sandwich roll. We love these, so much so, I have just taken the 6th batch I've made in 3 weeks, out of the oven. Thank you John for sharing this recipe with us. Can't wait to try more.

Can't wait to try this recipe, But I'll have to wait till tomorrow to get some more yeast :( I've got some Lidl's own brand in the cupboard with 14 months date on it that appears to be dead as a dodo, I wouldn't recommend it. Hi John, like everyone else, I love your videos. I have 3 of your books and have successfully made a number of your recipes. This particular recipe was a bit more tricky for me. Though I weighed every ingredient my dough was quite sticky after the first rise. I needed to knead/shape it with a bit of flour on my hands. Buns are going in the oven in about 15-minutes. Well John, I have never baked anything in my life before, but 2 months ago I started with your soft sandwich loaf, which much to my amazement turned out fabulous, exactly as I remember as a child in the UK. After 18 or so loaves in the last 2 months, now I am going to try these sandwich rolls. I wonder though why the difference in the initial mix?. i.e. in the roll recipe you mix all the dry ingredients together (incl the yeast) then add the wet ingredients. Whereas in the loaf recipe you mix the yeast into the wet ingredients then add the remaining dry ingredients. You also proof for 60 minutes for the rolls but only 30 minutes for the loaf?. It may be an obvious answer to an experienced baker, but since I am not, it is very puzzling to me. Thank you for taking the trouble to make these videos. At the age of 67 I never thought I would be learning a new skill like this.

When you get to the end of a step I always say “okay John”! My husband says you talking to John again lol. Brilliant just putting mine in the oven now . A tip for baking I found is to use the little pots that come with pizzas for small ingredients ie oil sugar malt butter fat etc
Condiment cups? Get a pack of 50 with lids at places like Walmart. I use Diamond brand and find them near the napkins and foil in the store. Only a couple bucks, if that. 😉

I followed the recipe exactly and these rolls were fantastic. I was making some fried chicken for sandwiches and made these for them. I was the perfect roll for the chicken. As there is no sugar in these rolls, there was not the sweet taste you would get from hamburger buns (in the USA) and the other seasonings on the chicken, mustard, pickle, etc. were able to stand on their own. Great recipe, John. Thank you for sharing it.

Outstanding recipe. Note, I used plain all purpose flour with 3 teaspoons of vital wheat gluten and a teaspoon of malt powder. The most important ingredient: patience!. Absolutely fabulous rolls, so soft and airy, perfect for sandwiches, or just plain with some butter. We used them for dagwoods. Speechless, how good they were. Many thanks for this one.

Made these rolls for the first time today. Got my Magimix out to do the initial mixing and then keaded for 5-6 minutes. Shame I can't put photos on it rose wonderfully. What a fantastic recipe & video! I've been making Scottish Floury Baps for quite a few years now, but these are even softer!
I made them yesterday & the first rise was fine. But the second rise took at least twice as long!
I live in Greece & my kitchen is cold (only about 19C) now that winter is here, so I do the first rise in my oven with a hot water bottle on the bottom & this works fine. I haven't got enough space in the oven to have a hot water bottle plus 2 shelves for the second rise .So I've always put the Scottish Baps in tented plastic bags in the spare bedroom with an electric heater on, which worked fine. Yesterday I put thin tea towels over them as per your video & put them in the heated bedroom as usual, but they took sooooo long to rise.
They baked really well & were lovely & soft. After cooling, I froze them & we took two out today for our lunch.....wonderful.
Just wondering if you have any idea why the second rise took so long

Yet another easy recipe, due to shortage of yeast tried a different one. Vac packed looked like coffee pack, open up to beautiful fine yeast possibly the nicest taste. My oldest granddaughter now makes fantastic bread thanks to your videos. Thankfully another generation of bakers.

Probably just made my twentieth batch of rolls. Decided with the great heat today (in the 30's in Buckingham!) to use cold water out of the tap instead of lukewarm water. It worked just as well, so I'm very pleased. They turned out just like the other batches I've made - brill. Bought a 16kg bag of canadian strong flour and it has been wonderful. Great videos John. I don't use a machine and have got the kneading down to a fine art. Between 5-6 minutes kneading to the dough becoming smooth and no longer sticky. Always do the full 10 minutes kneading. Always weigh the ingredients (water too). They never fail.

Thank you for the video. I don't own a kitchen scale, but the calculator says 500 grams is about 4 cups. I've found with other weighed recipes that stirring my flour then using a "scant" measurement it seems to work well for me. I've made lots of yeast bread/rolls from different recipes over the years, but was never happy with the texture of my bread/rolls. I'm trying yours today! The texture of the dough is definitely different... not nearly so sticky or soft. Thank you again. Hoping the rolls come out as nicely as yours did.
Great technique to always "lighten your flour" before measuring. Learned that one from Ina Garten's show Barefoot Contessa.

I haven't had a ham and cheese sandwich for ages and now I just fancy one yum
Hi John, just bought my first stand mixer and decided mixing the dough for these rolls to be my first trial. Never having baked anything before the last few months. I halved the weights for four rolls giving my new mixer an easy first ten minute operation. Your instruction is the best. I’ll be trying out all your recipes. Cheers indeed, Ray

This recipe is just marvelous! I followed the recipe exactly using an artisan bread flour and the results were stunningly delicious. For the second batch, I'm going increase the hydration a little bit (5%) and extend the rise times a bit in hopes of getting just a little more size and lightness in each 100g roll.

Tried these today for a buffalo chicken sandwich and they were amazing. Even better than the local bakery. My Dad used the extra's for burgers and he thought they were the best buns he's ever had although I prefer Johns hamburger bun recipe for that but to each they're own. These were amazing light and fluffy especially for how easy and relatively quick they were to make. Simply fantastic. Thank you chef John. Your channel has been my go to for any kind of bread or cheese making recipes for over a year now. Thank you for the video's I have gone from making my own bread/buns once a year or so to once a week or so thanks to your video's.

Same here, I've made them twice, the first time they turned out fantastic but the second time the second rise didn't happen so I ended up with smaller firmer ones, I used fresh yeast and tested it in the water mentioned and added a teaspoon on sugar. Both times the dough was really sticky it wasn't like in your video. Any suggestions on the rise and stickiness?
This recipe is so easy to follow, easy to make and they turn out perfect every time! We are in Bulgaria and although the bread is lovely, we cannot seem to find a soft sandwich roll. We love these, so much so, I have just taken the 6th batch I've made in 3 weeks, out of the oven. Thank you John for sharing this recipe with us. Can't wait to try more.

Hi John, like everyone else, I love your videos. I have 3 of your books and have successfully made a number of your recipes. This particular recipe was a bit more tricky for me. Though I weighed every ingredient my dough was quite sticky after the first rise. I needed to knead/shape it with a bit of flour on my hands. Buns are going in the oven in about 15-minutes. Wish me luck! 🇨🇦

Well John, I have never baked anything in my life before, but 2 months ago I started with your soft sandwich loaf, which much to my amazement turned out fabulous, exactly as I remember as a child in the UK. After 18 or so loaves in the last 2 months, now I am going to try these sandwich rolls. I wonder though why the difference in the initial mix?. i.e. in the roll recipe you mix all the dry ingredients together (incl the yeast) then add the wet ingredients. Whereas in the loaf recipe you mix the yeast into the wet ingredients then add the remaining dry ingredients.
You also proof for 60 minutes for the rolls but only 30 minutes for the loaf?.
It may be an obvious answer to an experienced baker, but since I am not, it is very puzzling to me.

Hi John I love your channel, I am an English girl living in USA and I miss home very much so it’s great having your accent (even though I am a London girl lol) talking me through my bread recipes! When you get to the end of a step I always say “okay John”! My husband says you talking to John again lol. You have taught me a lot about making bread, it’s my new passion, I never thought I could make bread (I have been posting pictures of my bread and other recipes on Facebook and one of my friends called me a kitchen witch, a great compliment that I share with you as it’s because of your videos and the great way you explain) and I didn’t think I had the tools and utensils to do so but where you show the alternatives I have built up my own bread making utensil drawer. I hope to be half as good as you one day. I was wondering if you have a seeded bread roll recipe that you could share with us? I am a vegetarian if you have any good veggie recipes that would be nice! Thank you for sharing your gift John! Oops as I was typing this message you say how you can add seeds can you add them to white rolls also?

Brilliant just putting mine in the oven now . A tip for baking I found is to use the little pots that come with pizzas for small ingredients ie oil sugar malt butter fat etc
Condiment cups? Get a pack of 50 with lids at places like Walmart. I use Diamond brand and find them near the napkins and foil in the store. Only a couple bucks, if that. 😉
