      Max has always been an omnivorous mindset. Probably closer to Mediterranean diet than anything else

    "Cold pressed" Olive oil. Even Avocado Oil, cold pressed are now my favorite oils.

    Soy milk and flax milk are same as cow milk in protein. 8g. Also less sugar. And in the case of flax milk, tons of omega 3 fatty acids

      the omega 3's in flaxseeds are of far lower quality than of that found in some fish

    great pod cast ! Thanks to both of you! I do have a question about the "bread is bad" thought. I mill my own whole grain and make sourdough bread once a week. I always thought that the white cardboard bread with cotton-ball flavor from the grocery store (like gag) that comes in a plastic bag is really bad; that's why I started baking my own. Now you say, bread in general is bad. Does that include real whole grain sourdough without any preservatives or added crap??? I do add seeds and nuts sometimes, though. I don't eat any processed foods, limit meat - especially fatty meat, but I do like 75g of my sourdough bread in the morning for breakfast with a hard cheese and some homemade Sauerkraut. That's my comfort food. Will my indulgence speed up the onset of dementia which is in my family?

      You’re doing great! Your homemade sourdough is likely way better than commercial bread and I wouldn’t worry about it, especially if it brings you joy.

    What a great podcast!
    Organic versus non organic do not make much difference in the carbohydrate structure to a huge amount. The starch can vary some by variety, but like oats, it is a starch. All,starches are complex sugars that breakdown. The proteins in wheat are also irritating to about 30% of the population. Wheat just had a lot of issues as a food substance. Refined grains as a whole are horrible.
    I do think that whole grains for many do work. I lean more low carb, but that is because personally, I an insulin resistance. I love oats, can’t do it very much. I am careful how it is done and do add things to it. Just like rice, I use brown basmati rice at times but refrigerate and am careful in the amount. Instead of a half a plate, it is more like a quarter of a cup with other veg with it and a good protein. I agree with what was said here.
    Sugar is just something we really don’t use. We don’t eat processed foods. We indulge in a sweet thing here or there as candy… but our home goes through about 5 lbs of sugar a year and it is primarily at Christmas. We do watch our cab rate. We don’t do sugar sweetened beverages. This was a huge shift for us about 20 years ago… best decision we could have made.
    I looked at first, getting the amount of proteins your body needs… yes I eat meat and have dairy. I prefer ethically grown grass fed or pastered animals. We don’t get all our protein from meat. We aim for about 100 grams a day and accompany our plate with vegetables and good fiber. We do include small amounts of whole grains and legumes. My food plate is 50% meat, the other 50% is a mix of vegetable heavy or a mix with or without whole grains and legumes . We do enjoy sometimes end with a fruits. nuts and seeds are a regular part of the diet.🎉
    Seed oils are just are incredibly concerning. They have some evidence of mitrochondrial damage. We use olive oil, butter, ghee, or coconut oil.

    Very curious about the casein obsession. Aren’t there studies turning cancer on and off in mice with just adding and removing casein??

    Great video! But I respectfully disagree with the blanket statement that what is good for the teeth is good for health or gut microbial health. Case in point: xylitol, specificalky xylitol gum can prevent cavities as the sugar loving bacteria that like to reside in plaque and contribute to plaque in your mouth will get fooled into consuming xylitol like it is sugar. The difference is unlike sugar, the xylitol is poisonous to them. so they self destruct. The artificial sugars like xylitol and aspartame also wreak havoc with your gut microbial health and kill many health promoting yeast and bacteria. By doing so, they can negatively impact on your overall health. Many researchers who are in the forefront of gut microbial search are pointing this out, with some suggesting that by causing your gut microbes to misregulate can actually increase your risk of insulin resistance, prediabetes, and T2D
    Also I agree seed oil is highly debatable with both sides of the fence making compelling points as evidenced by this fact based You Tube Video

    Is there any relation to whether it's "organic/non organic" grains that raises the CGM numbers for a person?
    I often wonder if it's not the grain that is causing the problem but rather how the original plant has been treated while growing and before harvest.

    My dentist told me couple months ago to stay away from bread. That the bread was the worst thing I could eat for my teeth.

    Well, this is interesting. I am from Mn. But love England. Heard they have the most fat ,unhealthy diet. I do know they all love there fish and chips which equal DEEP FRiED OILS. Now I hear what you are saying the UK people are dying from Alzheimer’s. Makes sense to me. Just thinking out loud.
    Many years ago I once heard when you deep fry a potato ,that potato now turns cancerous.
