    I’m a 13 year old that is trying this recipe for my family, I usually only bake for my family but today this looked extremely good but the thing is usually when I make dinner for my family, I always forget ONE thing and today it was chicken stock

    Traditional is done with dry chilies (which have been rehydrated with hot water) and a blender according to the neighborhood Abuela I grew up with in Albuquerque, New Mexico.

      When i bought individual ingredients at the local Hispanic market they just laugh and explained that the natives just use pre made sauce from a can. So I tried it. Quick, cheap and easy. Sometimes you just wanna eat without spending the afternoon cooking

      I make mine from dried chilis too (even if the rude guy, NN-ix, etc. doesn't care about making it the traditional way).. 🤪 I may try John's spice only sauce just to see what it it's like, but I really do like making it from chilis from NM! No way I'm going with flour tortillas though. That's just criminal, LOL! 😂🤣😆

    Cheers man. This was a big success for me. I’m 17 and I don’t do much cooking at all for my family so my mum and dad really appreciated me making this for them. My 11 year old brother helped me out with it and really enjoyed making it with me. My parents absolutely loved the meal so thank you so much for the recipe. I’ll tell you something funny though, I accidentally misheard you saying 2 teaspoons of apple cider vinegar and I thought you said 2 tablespoons so the finished product tasted a bit too much of ACV but I’ve learnt for next time. 😂

    My parents are from Mexico too and ive always made authentic enchilada sauce which is basically chiles guajillo, garlic, oregano , water and salt. My kids request them at least once a week lol. I use corn tortillas but when i make with green sauce i use flour tortillas becuase my older adult kids prefer them and they are delicious. Your recipe looks very good and im going to try to make them using your recipe. I love watching your videos you always have the best recipes. 😊

    I have never made red enchiladas but they look great. My family clamors for green chili enchiladas. I use flour tortillas. I pour the enchilada sauce into my casserole dish then dip my tortillas one at a time into the sauce. Spoon on the filling, wrap. Cook for 25 minutes at 350. I’m trying your red enchiladas tonight. You are great!

    This sauce is PERFECTION! One minor amendment is that I made mine with green spinach wraps instead of flour/corn tortillas - which were yummy and just as thin and easy to roll! 🤤 🙌🏻 👩🏼‍🍳 😄

      I live in a place where half the ingredients for an authentic enchilada are impossible to find unless you're very wealthy. So this is a nice way to get to try them.

      For the sauce: boil dry red chile pods (California, New Mexico or Guajillo) blend with garlic, oregano, onion salt and stock. I hear ya on the ingredient issue being that you are on the Eat Coast, but you may be able to find online. Tortillas: Mission or Guerrero brand. I also recommend red chile paste: Santa Cruz brand. Love your videos!

      And I always thought the kind I make (steaming dried New Mexico & other peppers) and blending them with garlic & spices was homemade.. His looks so much quicker and I'm definitely going to try it too! 😁

    I made this last night for dinner and they were an absolute hit. I actually like that you use the flour tortillas- and the homemade sauce, to die for 😍

    I like to add a little roasted chopped green chilles to my filling or I stir in a few tablespoons of jalapeno cream cheese. It makes the filling a little creamier! Yum

    Made this recipe, WOW better than the restaurants! I am now addicted. I also used 1 Chipotle pepper in sauce to Give it some smokey flavor

    The recipe turned out wonderful. I served this dish to 10 people for my woman's group last night. I made everything the day before and put it together at the last minute. The sauce was wonderful, better than canned but using canned sauce would be okay. I used the medium tortillas, the large ones were too big.

    Enchiladas is one of my favorite Mexican meals there are so many kinds of them. I love red sauce enchiladas with tomatoes and chili pods, enchiladas enmoladas, chicken enchiladas suizas made with green tomatillo sauce and has dairy in the sauce it's so delicious.

      @@PreppyKitchen Dish soap will work.
      Also: freeze your onion for 10 minutes to prevent onion tears. It freezes the liquid inside so it doesn't aerosolize in your eyes when cut.

      Amazon sells rubber garlic peelers, they work really well. They're tubular and you just put the garlic clove in and roll it and it takes off the skin....I love mine! =)

      @@suessosimplesogoodrecipes5410 Oh that's so cool. I hate dealing with the peel so much that I buy diced garlic in a jar now. Last month I found whole garlic in a jar. Picked that up. I know fresh is always best but it's just not the peel that bothers me. Its also the smell on my fingers that's left behind for HRS. No matter what I use to get rid of it I can never seem to. Great tool tip you shared though... 👍🏻

      Rub your fingers on a stainless steel surface, sink, knife, etc after chopping and it will eliminate the smell and stickiness

    I just made this tonight for my family. I did add some canned green chilis and a can of drained black beans to my chicken filling. I garnished them with tomatoes and lettuce. They were a hit! I'm stuffed now! Thank you for giving me another recipe to add to my collection.

    I live in Korea and it is pretty hard to find authentic Mexican peppers that a lot of other YT vids say I HAVE to use to make these sauces. I'm so happy you made this recipe cause I really think this will still be excellent. Thank you!!

    Thank you for sharing this recipe! I made enchiladas today for dinner for the first time ever and I used tomatoes from my garden for the sauce. My husband said they were better than the enchiladas at our favorite restaurant. The kiddos could not get enough of it either.

    I have a little garlic trick I learned from another You Tuber that I watch. Add some boiling water to the garlic cloves for about 5-10 minutes. It peels in a second; and easier to chop. You could use a good garlic mincer, too. I love your chopping board. Love your videos.

    That's the beauty of enchiladas you can make them however you want, awesome to know your mom is from beautiful Mexico, there are probably hundreds of enchilada variations between sauces and fillings, go crazy and enjoy you can't really go wrong. There's usually red chile sauce, tomato red, green tomato sauce and mole coated ones but from there there's a universe of combinations. Love your videos, Enjoy!

    I love this enchilada sauce! I didn't follow the recipe exactly... I pureed tomatoes I had canned last year and used 3c of the tomato puree and no chicken stock. Yummy!! Enchiladas are in the oven now!

    I’ll have to try your sauce! It reminds me of the ingredients I use in my rice (My Mom and Grandma’s Mexican old school way!) I’ve only used the canned Enchilada Sauce or homemade sauce leftover from my annual ‘tamalada’. Yours sounds so good I could almost smell it cooking!! Thanks 👍👌

    That looks delicious, I poach chicken leg quarters in chicken broth with bay leaves and a half an onion cut into quarters then skim the fat and use the broth in the sauce, I also add roasted poblano peppers and sometimes black beans, If I use flour tortillas I give them a quick shallow fry first then fill them 👍

    As a mexican I am curious to try this! Something that goes through my mind is that you could slightly fry the flour tortillas in butter, they taste good :) and they would come nicely crispy out of the oven. Although they would be more like an enchilada-burruto hybrid 😂
    Normally here we use fresh tomatoes and the sauce can vary from home to home (without oregano or cinnamon), and enchiladas can also be made with green tomatoes :) without cumin, just garlic, onion and cilantro. They can vary greatly. They are indeed made with corn tortillas but I understand you not liking them freshly made. Here it is different because well, we have tortilla shops everywhere 😂.
    You can also use roasted or grilled chicken for the filling, you may like them very much :)

    Decades ago I had tasted this dish for the very first time ......and flipped out !!! Ingredients were not readily available in Mumbai ......but finally on my son's request tried it out ......John love your recipies the mostest ....so had to try this out

    A quick tip: instead of smashing the garlic, save a glass jar with a metal top, place garlic cloves in and shake vigorously for a minute. The paper separates easily.

    Always put stuff like that seam side down in a dish.
    If you roast chicken thighs in a pan, put them aside, start your sauce in that pan, finish cooking the thighs in the sauce and shred that chicken, you get super intensive flavors.
    Fry those tortillas before filling them. Starts the flavors and makes them way easier to handle without tearing.
    Try to avoid dry tortilla spots. You can even add another queso sauce on top, for a perfect crust.

    GREAT recipe…However, after I made this a couple of times, I altered this way: I did not use a roux but instead used less chicken stock in the sauce. I also lessened the cinnamon to just the slightest pinch. I also added a dash of Cayenne pepper as well.

    That looked really good…my family used Las Palmas sauce but I would love to make my own. My dad is Mexican but we isn’t do anything traditionally. He made great Spanish rice and taught me how to cook. My mom is Italian and she didn’t really know how to cook 🤷🏻‍♀️ but made great tacos ☝🏽😆 I ended up being an Army cook 😳😃🙏🏽 love your channel, always learning❣️

    I always feel extremely blessed to have tortillarias scattered all over the city I love in. I’ve never even tried packaged corn tortillas. Haha.

    John I found yesterday a new recipe that you might love: German buttercream, I promise you, you might ditch the other buttercreams! It is very delicate in flavour and when you eat it it doesn’t leave any fat on your lips like you just applied lip balm.😅 I have always made Swiss and Italian buttercream but the German is the best, it is basically custard cream incorporated to an American buttercream.
