    Hi everybody, I want to apologize for not showing me add the tomato paste or the sugar, I accidentally deleted it when I was editing and i couldn't fix it. You can add them after you start adding the broth. I did include them in the recipe though, thank you. ❤️

      Hi. I am always looking for gravy made from scratch. Do you add the chicken broth to the butter/oil/flour mixture and then let it thicken on the stove? Do you add salt & pepper or other seasonings?

    I absolutely love how you go through every step and add details like "stir it so you don't get the skin on the sauce "... etc etc.. the little things like that are important to first time cooks

    I made Rachel’s Enchilada casserole last year with this sauce. It’s worth the effort!!! My family flipped over it. We live in Texas and until Rachel, I couldn’t compete with our favorite Mexican restaurants. She should have her own restaurant. LOVE Rachel❤️

    Hi Rachel,
    I have made this enchilada sauce several times now. It is the best! I have kept it in the refrigerator overnight to let the flavors marry. Then I freeze it. It works just beautifully and I must say, it is nice having it already made up when you want to make a huge Mexican dinner. I thaw it overnight in the refrigerator and just heat it up to dip my enchiladas. It is just a fabulous sauce. There is nothing better. Thank you so much for this recipe. ❤

      Freezing in itself will marry the flavors..not necessary to wait if you’re freezing.

    So the best enchilada sauce I've ever had in my life was Casa Guadalajara in Old Town San Diego. The Mexican Restaurants in that area do things right and amazing. Then I tried this recipe. This one is just as good, if not, better than the restaurants in Old Town San Diego. With some minor adjustments to the roux and different steps (like cooking the flour for several seconds to roast it more before adding the oil), i think I can make it better than any restaurant. Thank you!

    I just made this today.I quit making enchiladas which I love,because the canned sauce was so bitter and tasteless to me.I have tried other recipes over the years but no joy.I did this exactly as youbdid and I just took a tastd.My tastebuds are so so happy what a pleasure.I took taste after taste so onto the enchiladas .Thank you dear lady.

    I made this enchilada sauce to go with my beef burritos yesterday and it was the BEST enchilada sauce I have ever tasted!!!!! I followed your recipe except I didn't have Mexican oregano - just regular and it was delicious! My husband actually got seconds and he never gets seconds - that's how good it was. Thank you so much for this recipe. It's so simple yet so delicious!!!

    One of the easiest and my go to recipe for enchilada sauce. My friend, I give this sauce 10 stars! Now I'm inspired to make enchiladas for Sunday dinner. I truly think it's time for you and your Ron to look at putting all your delicious recipes into a book. I know you'd have a best seller. Again, another recipe that hopefully all your viewers already have in their recipe boxes. May y'all just have the smoothest of rides toward the weekend.     There is nothing like the flavor of homemade enchilada sauce. My favorite way to eat it is in a bowl with refied beans and plenty of cheese over the top. Sometimes I add taco meat on the top of my beans! Delicious! Gosh I’m hungry for it right now! Thanks Rachel! I’m trying your recipe next time I make enchilada sauce.

    My husband doesn’t care for this type of food. I made both the enchiladas and the casserole for him. He LOVED them both. I even made them once with no meat. A big no no. I used black beans, onions and cheese. He liked those as well. Thank you Rachel. I now get to eat food I love!

    This looks amazing! As someone who cooks food (a lot of Indian food but also Mexican/American/Italian) from scratch almost daily, this is wonderful to watch food being cooked and not just more canned items thrown into a pot. Living in the U.S., I feel that the skill of cooking isn’t taught in any home. I’ve been (embarrassingly) using canned enchilada sauce for enchiladas and today decided I need to teach myself how to make it at home. Love your style of teaching. I do need to find some substitutes for flour bc I’m gluten sensitive and vegetarian broth.

    I love making this sauce. It’s mesmerizing stirring and watching it change and the flavours develop. I usually make two batches back to back and make pans and pans of chicken enchiladas. My kids take them home and think their Mama cooks with love ❤️❤️❤️🇨🇦

    Miss Rachel - My wife and I just made your 5 Star recipe on Saturday evening. IT WAS AMAZING!!! Our best batch of beef enchiladas ever!! All because of your sauce recipe!! We used other recipes previously. Most using chilis that require cleaning, boiling, etc. your recipe saves time and tastes delicious!! Absolutely can’t wait to use it on other dishes!     Hello Rachel! Thank you for this 5 star recipe! I made this sauce for tamales and it was a big hit. Hubby is from Albuquerque and although we live in Houston TX (tex Mex country) we prefer New Mexican style cuisine. I have never made a good chile gravy /sauce until now thanks to you. Will be making more today with extra hot new mexican hatch chile powder per a big request from hubby. He even asked if I sent you a thank you.     I have made enchiladas twice now and they were both amazing. One with chicken broth, chicken bullion, and shredded chicken enchiladas. The other with beef broth, beef bullion, and ground beef enchiladas. The sauce is even amazing on a tortilla chip

      @@pattwhitmore8365 Needs to be cooked longer. Add a cup of water and let it simmer for at least thirty minutes on low until it thickens. Don’t over use the bullion, could sour the sauce.

    Hello thanks for sharing I usually make mine Jst with flour oil , chili powder , garlic powder salt and water but tried this way and it’s has a much better flavor absolutely love it thank you so much 🫶🏼 I can watch your videos all day

    Using your recipes our homemade food is so good. Really economical too. I will never ever buy canned enchilada sauce again. Its so easy to put together and always have the ingredients on hand. I find myself using up my spice cabinet.

    💁🏻‍♀️Thank you sooo very much for making your enchilada sauce...I made some from a past video and let me tell you IT'S EASY & DELICIOUS!!! I once used "chipotle chili powder"(🤢...I didn't care for it therefore I was disappointed as I desire traditional Mexican flavors) and I sincerely recommend using a chili powder you are familiar with the first time you make this
    ☝🏻Follow the instructions/directions Rachel gives you...from the ingredients such as Mexican Oregano and NOT Italian oregano to the way she layers the ingredients in stages because you are essentially building the sauce and it comes out perfectly😊👍🏻

    I make this enchilada sauce but never use knorr chicken powdered because of all the chemicals in it. I use fresh minced union, garlic, fresh ground cumin & pepper and chili powder. I was born in Weslaco Texas in the Rio grande Valley and moved to California in 1967. I been told I cook food the old fashion way, spices, chiles, herbs, fresh garlic , onions , fresh broths, vegetables fresh quality meats. Lots of flavor from my fresh ingredients and good quality ingredients that I also grow. Avocados, vegetables from my garden, tomatoes, peppers, artichokes, herbs, peaches, apricots, nectarines, limes and Meyer lemons all from my yard.

      You add the tomato paste after you add the chicken broth for the first time. You add the sugar after you add the chicken boullion.

    We love this sauce. Made chicken enchiladas and they were fantastic. Thank you, I never liked the canned sauce that I would buy from the grocery store. So easy to make and I have all the ingredients on hand. I watched your chicken enchilada video and followed your instructions. Not crowding the pan is so important. Thanks again.     I made this again, substituting white onions, garlic and unsalted chicken stock. Doubled the recipe because it went over so good. This is hands down the best red enchilada sauce I've ever had and I've traveled a lot. Anyone thinking about trying this just do it. Your favorite Mexican restaurant will miss you.

    All I can say is WOW! This is the best enchilada sauce I've ever tasted. It's even better than most of the restaurant sauces I've ever had. I don't think I've ever had one of Rachel's recipes that wasn't outstanding!
