We fry the tortillas in oil for 10 seconds before dipping them into the red sauce. Makes all the difference in the world. I’m from San Antonio, Texas. 😉

I made about a dozen corn tortillas,two whole wheat and 4 flour. I didn't even get close to your recipe as it was my first time and let me say everybody in my home loved the enchiladas said it was the best they ever had. She also makes them a different way like a casserole style and I wanted to try a more authentic way... I love enchiladas! Unfortunately my tummy doesn't like spicy/hot foods. So I use a method my grandma taught me to tone down the spiciness. Now, I can enjoy enchiladas again. 😋 I just mix equal amounts of enchilada sauce and beef gravy. It still tastes amazing, but doesn't upset my tummy. Edit: I also like black olives, and green onions on mine. 😆

This is my first time on your channel. I just happen to see the picture of you holding the tray of enchiladas and my mouth started watering right away. You took me over the edge with that sauce that you made. I make wonderful enchiladas but I use the store bought enchilada sauce and I am not happy with it because it has changed over the years. Views on the road Funny you mentioned that, I’m actually cooking this recipe along with you right this moment. I didn’t have chili powder so I made it with paprika and other spices. The sauce is a little bitter so I probably didn’t cook it enough or added to much of paprika for the chili powder but anyways, I tried. It was still pretty good for my first time making enchilada sauce so thanks for the vid!
I love to add some sliced black olives inside and on top of my chicken or cheese enchiladas (along with cheese and sliced green onions, on top.) Gives a special added flavor.
When I was about 25 I worked for a woman named Nana Ruiz, she was in her 80's, she ran a restaurant in San Luis Obispo, she would heat the enchilada sauce in a shallow pan coat the tortilla swiftly fill it and then serve with a garnish. Years later I did the same and made 3 dozen, it was a quick way to coat the tortilla and soften them quickly, then repeatedly adding more sauce for each one... just a tip you might want to try . You just came across my TH-cam home & I clicked, glad I did. Loving how you heat the tortillas without any oil that is a make or break for me on how I prepare dishes. I’m trying to teach my baby sons’ how to grind comino seeds in a molcajete. I ask my hubby if he would like sour cream or glue (Crema Mexicana) on his tacos or tortas...I love cooking and fusing two cultures of food together at times we have had mole and etouffee together and it’s amazing how wonderful tortillas taste with etouffee. Have to try these, amazing how many versions there are. We grew up with a similar recipe. We did use flour to make it a heavier gravy, and we dipped the tortilla for a few seconds in hot oil. Instead of chicken we used longhorn cheese with diced onions as a filling, then cheese and onions on top with gravy. But I like your version and will try it.

Thank you For the help making the sauce! just needed to learn that part. For anyone watching, im sure someone has thought of this already but i figured i'd try an idea out and made " jalapeno, beef, cream cheese stuffed enchiladas " with mozzarella and taco blend cheese sprinkled on top. yall should definitely try it. I think it is one of my new favorite recipes. I also added a whole red jalapeno sliced in 4 pieces with the seed into the sauce while simmering and hunts diced tomatoes. The filling also had mushrooms, onion, tomato, green bell pepper and one red jalapeno cooked separately in a pan then added to the meat half way through cooking then cooked further before stuffing the enchiladas and one half asparagus spear in the center. but i dont think anyone wants to do all that. Seasoned the sauce and meat with garlic powder, onion powder, chilli powder chilli mix seasoning fresh black pepper and ground salt. Also just a smidge of season all. I cant eat gluten so i thought i'd try that out since most pre made gluten free stuff kinda sucks. So i gotta get creative when i cook.

@@jackipalmer5680 i used deep glass baking safe dish as the receptacle and as for the filling it was a bit messy but after dipping your corn tortillas in the sauce you add a small amount of the meat with a spoon, then i sliced 2, maybe quarter inch thick chunks of cream cheese from the smaller side of a block of cream cheese and placed them end to end in the tortilla. but if your using the tub you could probably spread a healthy amount on the tortilla then add the meat veggie mixture, and extra diced jalapenos ( optional ) with a spoon and the spear of asparagus last ( if using asparagus) and carefully roll the tortilla closed and set fold down so that it wont open up on its self when you place in the pan. Then once the pan is full i added more of the meat veggie jalapeno mix on top of the enchiladas then added the sauce on top and finished by covering with shredded cheese. I’m glad she stayed completely focused in the beginning, on the step process for cooking the Chile powder and how critical it was, (except for the conversation she had with the child.) Still not a bad video...can’t wait to try it.
We love Santa Cruz Chile. My wife is from Tucson and I am from Southern CA. When we visit the familia in Tucson, we stock up on the powder and the paste. I have tasted all kinds of red chile, and gottta tell ya, where the chile was harvested, due to the soil and conditions of that area, it does matter a lot. I have tasted red chile all over CA and cannot get into the flavor, because I have been spoiled by the product from Tucson, or Tumacacori AZ to be exact, and the chiles found only in Hatch New Mexico. I have run into all kinds of people from SoCal, whom have learned about Santa Cruz Chile, and they stock up or have friends and family ship the stuff to them. But, whatever the people want, is good too. I am just hooked on that special flavor from the Southwest, you cannot duplicate anywhere in SoCal. And yes, I have tried all kinds. I am 60 (don't feel like it tho) and have tried from all over my home state. Anyway, love your show and your approach to cooking....al estilo raza, add and subtract ingredients according to the mood. Why do my tortillas come out mushy, mushy, ?….anyone?
@@williamscott2461 try frying them in oil for like 10 seconds on each side and, of course use corn tortillas not flour and you should be golden

Also best to use corn tortilla instead of flour flour tends to get mushy while it sits in the fridge if it’s still leftover
Fry them in oil, preferably lard first. The oil protects the tortillas from getting mushy

This is my first time on your channel. I just happen to see the picture of you holding the tray of enchiladas and my mouth started watering right away. You took me over the edge with that sauce that you made. I make wonderful enchiladas but I use the store bought enchilada sauce and I am not happy with it because it has changed over the years. Other than the sauce, I make my enchiladas just like you make yours. I am going to try this. I have a feeling it will be my new way of making enchiladas. Thank you for sharing your recipe with us.

Views on the road Funny you mentioned that, I’m actually cooking this recipe along with you right this moment. I didn’t have chili powder so I made it with paprika and other spices. The sauce is a little bitter so I probably didn’t cook it enough or added to much of paprika for the chili powder but anyways, I tried. It was still pretty good for my first time making enchilada sauce so thanks for the vid!

We use gebhardt chili powder for everything to enchiladas to tamales and pozole. I love it!!
I love to add some sliced black olives inside and on top of my chicken or cheese enchiladas (along with cheese and sliced green onions, on top.) Gives a special added flavor.

When I was about 25 I worked for a woman named Nana Ruiz, she was in her 80's, she ran a restaurant in San Luis Obispo, she would heat the enchilada sauce in a shallow pan coat the tortilla swiftly fill it and then serve with a garnish. Years later I did the same and made 3 dozen, it was a quick way to coat the tortilla and soften them quickly, then repeatedly adding more sauce for each one... just a tip you might want to try . You just came across my TH-cam home & I clicked, glad I did. Loving how you heat the tortillas without any oil that is a make or break for me on how I prepare dishes. I’m trying to teach my baby sons’ how to grind comino seeds in a molcajete. I ask my hubby if he would like sour cream or glue (Crema Mexicana) on his tacos or tortas...I love cooking and fusing two cultures of food together at times we have had mole and etouffee together and it’s amazing how wonderful tortillas taste with etouffee. Have to try these, amazing how many versions there are. We grew up with a similar recipe. We did use flour to make it a heavier gravy, and we dipped the tortilla for a few seconds in hot oil. Instead of chicken we used longhorn cheese with diced onions as a filling, then cheese and onions on top with gravy. But I like your version and will try it.

Thank you For the help making the sauce! just needed to learn that part. For anyone watching, im sure someone has thought of this already but i figured i'd try an idea out and made " jalapeno, beef, cream cheese stuffed enchiladas " with mozzarella and taco blend cheese sprinkled on top. yall should definitely try it. I think it is one of my new favorite recipes. I also added a whole red jalapeno sliced in 4 pieces with the seed into the sauce while simmering and hunts diced tomatoes. The filling also had mushrooms, onion, tomato, green bell pepper and one red jalapeno cooked separately in a pan then added to the meat half way through cooking then cooked further before stuffing the enchiladas and one half asparagus spear in the center. but i dont think anyone wants to do all that. Seasoned the sauce and meat with garlic powder, onion powder, chilli powder chilli mix seasoning fresh black pepper and ground salt. Also just a smidge of season all. I cant eat gluten so i thought i'd try that out since most pre made gluten free stuff kinda sucks. So i gotta get creative when i cook.

@@jackipalmer5680 i used deep glass baking safe dish as the receptacle and as for the filling it was a bit messy but after dipping your corn tortillas in the sauce you add a small amount of the meat with a spoon, then i sliced 2, maybe quarter inch thick chunks of cream cheese from the smaller side of a block of cream cheese and placed them end to end in the tortilla. but if your using the tub you could probably spread a healthy amount on the tortilla then add the meat veggie mixture, and extra diced jalapenos ( optional ) with a spoon and the spear of asparagus last ( if using asparagus) and carefully roll the tortilla closed and set fold down so that it wont open up on its self when you place in the pan. Then once the pan is full i added more of the meat veggie jalapeno mix on top of the enchiladas then added the sauce on top and finished by covering with shredded cheese. I’m glad she stayed completely focused in the beginning, on the step process for cooking the Chile powder and how critical it was, (except for the conversation she had with the child.) Still not a bad video...can’t wait to try it.
We love Santa Cruz Chile. My wife is from Tucson and I am from Southern CA. When we visit the familia in Tucson, we stock up on the powder and the paste. I have tasted all kinds of red chile, and gottta tell ya, where the chile was harvested, due to the soil and conditions of that area, it does matter a lot. I have tasted red chile all over CA and cannot get into the flavor, because I have been spoiled by the product from Tucson, or Tumacacori AZ to be exact, and the chiles found only in Hatch New Mexico. I have run into all kinds of people from SoCal, whom have learned about Santa Cruz Chile, and they stock up or have friends and family ship the stuff to them. But, whatever the people want, is good too. I am just hooked on that special flavor from the Southwest, you cannot duplicate anywhere in SoCal. And yes, I have tried all kinds. I am 60 (don't feel like it tho) and have tried from all over my home state. Anyway, love your show and your approach to cooking....al estilo raza, add and subtract ingredients according to the mood.
