pro tip for newbie servers: if you forgot how your guest wanted their steak cooked, always set it to medium. that way it's a fast "throwback" if it's too pink and they wanted it more on the well side, or a fast re-fire "OTF" if they needed it on the rarer side. don't jam up the POS.

Working weddings, meals are pre-ordered and made. We don’t ask how people want their steak otherwise we’ll get a million different answers and there’s no time for that.
One time I worked at wedding with people fresh off the boat from Italy and they ALL said “arent you going to ask how I want my steak.” Chef wasn’t happy.
