Here's the science behind freeze drying: the water molecules within the sweets are frozen and are then turned to steam (skipping the liquid state, this is known as sublimation). The steam creates the aerated texture. Since the water is being removed, the flavour is intensified! Hope this helps 😁
Mexican/American here!! Sooo chamoy is a sweet chili sauce made out of fruit like plums and tamarind. You can put it on sorbet type things (great in mangos btw), fruit, candy, and if you want just on your own!
If you have a chance to try actual Salt Water Taffy, I think you'll find that it isn't actually salty. They're really good and I do think you'll like them!
I would love to see you take a crack at making some of those edible crystal candies. They're not available in my country and I deSPERATELY want to bite down into one but haven't been able to get a recipe to work! Would love to know if your baking background could shed some light on the process

I don’t get the science but I think it makes sense that freeze dried sweet with no moisture would intensity the flavor, what I’m more surprised by is when the channel made cotton candy from hard candy which intensified the flavors.

They are a German sweet invented in the early 1900s and marketed globally, as Werther's Originals, from the late 1980s. I don’t think I’ll ever understand people who go on about food texture as a means of saying they can’t eat it Texture?? I don’t think I’ve ever noticed food texture in my life except for the odd foods that have a really good one like say something smooth and creamy What the heck is texture to if a good tastes good or not?? I’m so confused It’s flavour that matters but texture?? How does it taste? If it’s good I’ll eat it
Texture is obviously a mouth feel or sensation. I dont particularly like foods that are gummy and feel like its sticking to your mouth and is hard to swallow. Things can taste nice but I wouldnt eat if its texturally unpleasant.
@@misatosdirtyfeet yes - cooked cabbage and raw meat don’t bother me - I’ve eaten slimey okra and rare meat and raw fish and raw seafood - the world is full of things to experience and I’m rarely afraid to give something a go - as I said if it tastes good I’ll eat it

You’re describing Tajin instead of chamoy. Chamoy is a spicy tamarind sauce popularly used when eating fruits and veggies like cucumber!
I think the reason she did so is because champy covered candies tend to have Tajín or Miguelito

Have never heard anyone pronounce baklava like that. Hope I get to try some freeze dried candies one day though. They look so good!
Freeze dried candy are the best, we have this brand in a mall called " kaptain sweets" they sell EVERYTHING, cotton candy, slushies, boba tea ect.
They do Nerds in Sainsbury’s now! (not the really expensive international food section, just the normal sweets section!)
