- Chocolate chip cookies with chewy rice cake (mochi) as a filling, who can resist that! It's one of the hottest snacks right now in Korea!
The cookies is not exactly like those crunchy nor soft chewy type, it's more of a cakey dense brownie texture, together with the chewy mochi inside, perfect!
=Ingredients=
For Cookies Dough:
60g Unsalted Butter
24g Brown Sugar
24g White Sugar
1/2 an Egg
1/4 tsp Vanilla Extract
70g All Purpose Flour
14g Cocoa Powder
1/4 tsp Corn Starch
1/8 tsp Baking Powder
Pinch of Salt
For Rice Cake (Mochi):
40g Glutinous Rice Flour
1 tsp White Sugar
40ml Water
Pinch of Salt
*Chocolate Chips as toppings
