    Tomato is a really unique idea. When I fry up cabbage, I always add broccoli, jalapeño, onion, sesame oil, and some cilantro. I know it’s probably not an authentic dish, but it sure is good.

      Balsamic vinegar is sweeter, but an acceptable substitute. Add a bit less and see how it tastes. You can add some rice vinegar to balance the sweetness (half balsamic, half rice, again adding less than called for to leave space for adjustments).

    I like the traditional version which is just cabbage, fatty pork, chillies, garlic and sichuan pepper corns.

    i suggest you get a good authentic cleaver knife. they are cheap -- then season your wok properly and buy a wok ladle. you got skills but paired with bad tools.

    My mother cooked cabbage by slicing it up into the same type of pieces like in this video. She would get the pan very hot, add oil, wait 30 seconds, and put all the cabbage in and stir it for a few minutes. Once it is about 50% cooked, she added a half teaspoon per pound of cabbage of Hon-Dashi granules. Cook it just until thick pieces are barely soft and serve. You can add hot water at the 50% mark and make soup. Extra Hon-Dashi will have to be added, because the flavor will be diluted by water.

    What about adding salt to the cabbage and put some form of weight on them to drain them from water? U would recommend this yea or no?

    love the videos,also want to try some of the recipes but i have bad ibs(irritable bowel syndrome).i cannot eat sugar,raw or cooked,are there any options to take out the sugar and replace with something else

      You can replace refined sugar with palm sugars or honey. Anything sweet can be used really to replace sugar - Lee

    I didn't appreciate the comment, ah I forget this is for a Western audience. Your Accent Clearly says that you were raised in the West, and your family came to the west why ? for a Lower Standard of Living. Assimilation means, you are a Brit first, and one who honors their heritage. More often than Not, I find first and Second generation immigrants to be the ones Identifying Themselves to their parents place of Birth. That is equal or more reason why there is cultural division. Remember what Gandhi said, WE must be Indian First, and all else second or we will end up divided.
