    今日作ってみました。シェフの下ごしらえのお手本を真似てみたら胸肉なのにとってもジューシーに仕上がって美味しかったです♪

    Yes! I lived in Oita, and this was my favorite food there. It's so hard to find in the United States, and so are recipes. Thanks for posting.

      +hitachicordoba Yeah, it's pretty much a local delicacy of that one prefecture, and a lot of Westerners don't make it down to Kyushu, so I guess it just never caught on elsewhere. An amazing dish if made right!

    Thankyou! I love this sweet lady and her dog...bless them both! and thanks for the inspiration to make tempura batter. I did not have potato starch so I used arrow root powder instead as a substitute and it came out great! I made 3 zuchinni into a very tasty filling meal and served with vinegar, soy sauce with garlic, ginger and hot chili's similar to Filipino Adobo sauce.

    Should try this out if you haven't. Very simple to make and you can store it prepared in fridge and ready to make at any point in the day.
    Nice little salad and rice with this makes a great breakfast or lunch.
    Some other sauces that go nice with it are a mild curry, honey sauce and mild chilli sauce.
    Orange sauce would probably go nice with it as well.
    Equally, you could also do some fun stuff, add some crushed up chilli in with the batter mix.

    以前採り上げておられた「だんご汁」に続き、我がふるさとの料理で懐かしいです!今でこそ「からあげ」が有名な大分ですが、昔は大分固有の名物というと「とり天」でした。宴席で大皿に山盛りに出て「わぁー」ってなった子供心を思い出します。次回も九州の料理ですね!楽しみにしております☆

    大分名物のとり天、大分市民として紹介してくださってありがとうございます。レモン以外に、醤油ベースの甘辛いたれ(ちょっとテリヤキ風)、ポン酢、塩とカボスなど様々な味がお店によってあります。別府市&大分市にはとり天のお店が色々ありますので、いつかいらして食べに来てくださいね。

      +motohiro satou 大分県にはコレ以外の郷土料理が沢山あります。小麦粉をこねて作った生地に、角切りに切ったさつまいもを入れて平たく伸ばし、茹でて作るゆでもち。小麦粉の団子を作り、それを平たく伸ばして茹でた麺に、きな粉をまぶしたやせうま。どちらも、大分県という土地を象徴する食べ物です。椎茸も量産されるようになったのは、ここ200~400年ほどのことです。

    I find it so difficult to deep fry things with batter like this or tonkatsu because I don't know if the inside of the meat is cooked or not. I had an issue with the inside still uncooked :/

      +Lisa Le I had the same issue when frying meat as I didn't know if the meat had been properly cooked to the correct temperature. I invested in a meat thermometer and it has payed off.

      +Lisa Le If the oil temperature and cooking time are right, the inside of the meat should be cooked. :) In this recipe, be sure to cut the chicken into thin strips. By the way, Chef made many mistakes while cooking and she learned from the failures. Hope you enjoy our other deep-fry dishes in the future! Ganbatte!

    That looks so light and fluffy not real dense like some tempura chicken here.
    I love to cook. I don't cook much at home cause its just my daughter and me. My daughter says she thinks I would be happier if I could find a man that would love for me to cook for the family. LOL
    If people would by the ingredients and then at least give me some money for my time I would cook any of my recipes for them ;)

      I don't have to defend myself on here but I want to apologize to "Cooking with Dog" I didn't mean to have people make rude comments. I love to cook and I have my Italian genes that affect my weight, but I love who I am, I love to cook and I love my daughter. BTW I do cook for my daughter and I but sometimes she will cook too. I may not be a model but to me looks are not everything its whats is in the heart and soul that matters the MOST! And to a lot of people, I have a beautiful soul.     The more I watch of these recipes, the more I realise that Western and Japanese ways of cooking are entirely different. Chef cooks so delicately and calmly, whereas I've never met anyone who cooks like that here in Europe.

    If you take it out and increase the oil temperature and fry it a second time for 30 seconds it will come out even better :)

It may be daunting at first. But I just started cooking a little over a year ago. And I thought the exact same thing, but it's actually fairly easy and really fun!

      You have to practice to get better... I got so pissed at my self at one point on the cooking journey that I just started wasting eggs.. not on purpose mind you, I just couldn't get it right.. anyways, after going through cartons of eggs.. I finally got good at cooking them sunny side up.. it was a long and arduous process though. I also am able to cook really good scrambled eggs as well.. properly.

      Toriten is breast meat, and including flour in the batter. Because this is Tenpura. Karaage is not tenpura. Tenpura batter is made from flour.

      +marisina Shikiko Nope they are correct with tenpura. Tempura is how westerns romanised the spelling based off of pronunciation. Similar to how shinbun (newspaper) is referred to as shimbun by westerners.

      the biggest difference is how to eat.
      Karaage needs nothing because it has strong taste.
      Toriten needs Ponzu because it is lightly seasoned.
      they look similar but taste different.

      cooking wine is fine too. alcohol is going to evaporate while cooking anyway

      When we say sake in cases of cooking,it means "sake meant for cooking". We actually don't use sake for drinking for cooking in Japan.

    what oil does the chef use? can one re-use the oil? seems like a lot to throw away...

      +Agatha Allen For deep frying, vegetable, canola, sunflower, peanut oil are all fine, but not olive oil because olive oil has too much flavor and deep frying gets rid of it.
      Yes the oil is reusable, just use a mesh strainer to strain out any bits of batter. The oil will be a little bit darker but that's okay.

      I deep fry with olive oil and nothing like that happens. Also I think reusing is the worst you can do. My chemistry teacher told us once that...

    Hai! I hd tried to cook yr choux recipes n eveytime it turns fab..... nw I gonna try tis recipes but there is ONE problem... I m a MUSLIM n if I m not mistaken...sake is a Japanese wine...rite? I against MUSLIM law to drnk or add(in yr food) any alcohol... is there any option beside sake?

      +Noor Hayatee , If I recall correctly, you can substitute it with water. and for substituting mirin, you can use Soda beverages (i.e. Spr*te or 7*p).

      +Gabe Rosales Mirin is sweet wine, so it'll taste a little sweet. Adjust seasonings accordingly and you're good to go :)
