Kosmo, What temp do you run the kettle at when your cooking indirect to 100*? When your done indirect do you open the lid and vents to get the coals really hot? Or do you let it run hot the whole time your indirect? Thanks
Daniel Klein If I recall correctly, he doesn’t run full throttle he keeps the bottom WOT but shuts the top vent to about 1/3open , he brings it up slowly since the steak is already rested (at room temperature) for at least 30-45 mins prior to cooking so, it won’t take long to reach 100°-105°. Now when he sears it, of course the lid is off and it’s a fire breathing dragon at that point.

Hi ChildishCodino, I would say Dirty Bird and maybe Killer Bee Honey would be two to go with. Dirty Bird for the salty Savoury Flavour, and Killer Bee Honey for people that like a sweeter flavour.

Hi Legacy Music, The majority of the shots you see are on either the Canon 24-70 L Series lens (that’s the A Camera on the set) Then the Canon 24-105 L Series for the outside stuff and the B Roll. If you’re shopping, this one has image stabilization which is a huge help! We also use an ND filter on this lens so we can get better exposure outside.

Next time you make them kabobs slice up some sausage and then you stab the shrimp tail, slide the sausage on and then stab the head of the shrimp kinda like it’s wrapped around the sausage. Id assume hes running the kettle with all vents fully open. Get blazing hot.
