    “More fun than prom night” - too funny! Great cook! Grilling season is in high gear in Texas and I was hoping to find a good lobster tail cook. Hard to beat a surf n turf night with friends. Another twist on use of compound butter: let your steak rest in a melted compound butter bath then sear that buttery flavor in. Keeps the crust from the sear good and crisp! Thanks for the video!

    If I'm paying $4,000 for a smoker, it damn sure ain't gonna be a pellet, as much as I love my Pit Boss. I can get a custom built offset for that price. A Yoder YS1500 is about $500 more, but it's built like a tank, not some Chinese Traeger. They are wild for selling this at that price. No wonder they're giving them away to every TH-camr.

    Ok. Watched all you guys use the new Traeger. Obviously they gave all of the cooking guys a free one. I watched 4 of you guys and that MONSTER lobster tail put you over the top. As always. Whoever's idea that was deserves props.

    I've recently read reviews about the Traeger Wireless Meat Probes. Many users have reported frequent connection issues as well as significant calibration inconsistencies. Since I love the idea of a totally wireless thermometer, I'm intrigued by the technology but I'm a reluctant because of the negative reviews.
    I'm curious as to how long you've used this device and how well it has performed.

    Good grief! That lobster looks so incredible. Grew up in Pacific Northwest, Washington State. Love good seafood. Loving that treager grill too. Surf n Turf….great job Matt. Once again you killed it.

    I love all the videos. Great cooks. Love the ODK (Outdoor Kitchen). Does smoking seafood(shell or fish) leave oils(seasoning) in the smoker, where transfer is a concern?

    Bummer about the steak. Did the Timberline really go from 225 to 400 in 2 minutes? I like to season my smokers with a big fat pork butt the first cook. That thing was way too clean for that steak and lobster. Keep doing what you are doing Matt! It's always a great day when a video drops from Meat Church!

    the best way to cook lobster is to smoke the butter then sous vide the lobster in said smoked butter. Chop it and make a heck of a lobster roll.

      personally if I was going to spend that much I would rather go with one that is considered a "high" end grill, such as coyote, memphis or twin eagles to name a few.

      @@Seven7ails at 4:16 there definitely looks like there's a liner. I have the Timberline XL and there is no Traeger stamp on the drip tray. It's smooth the only thing with a stamp is the drip tray chimney stack that says "Est. 1987"

    Meat looks delicious.
    Nice to see some innovation from Traeger. I think LoneStarGrillz really gave that market a kick in the ass the way they designed their pellet grill, so that would probably be my preference, but I've got my eye on one of their large insulated cabinets as you can run it with a FireBoard or something the same way you would a pellet grill but with the flavor of charcoal and wood instead.

    Been cooking a lot of lobster tails over the last 3 years on my pellet grill, actually doing 4 smaller ones on it this afternoon. Never saw a video from you doing them Matt, watched a lot from others who do them very similar including the butter basting, but I've been using the Meat Church Honey Hog on them & they always turn out fantastic, wife says I've ruined lobster at seafood restaurants for her. But now, seeing you use the Holy Voodoo & Seafood Seasoning, I'm really curious to try it. That steak looks magnificent!
