Wow! This is banging. I made a few changes. Instead of tomato paste I used sauce and cut up russet potatoes. Flavor was incredible. Kudos to you. Excellent.
Turned out amazing, I too made some adjustments, I used Better than Boullion Chicken broth so didn't add quite as much salt. I also grow my own parsley, whose stems can get quite thick like celery on a mature plant, and used that instead of celery. Wow it upped the flavor (and nutrition) quotient. It did need the extra flour slurry to thicken at the end and I skimmed off some of the fat and oil before adding it in, since there was plenty of liquid after. I even used 4 cups of broth, just under the liter recommended on the recipe card, and it was plenty. My husband LOVED this. Best stew I have ever made. I loves playing with my IPot, Thanks!

Looks good. Probably the only things I'd do differently is maybe add a can of corn (drained) or some frozen mixed veggies and some sauteed mushrooms. Then when finished, I'd turn on the saute/searing mode and add some cornstarch water to give it a nice thickness. Simmer for about 5 minutes on low, serve and enjoy ! 😋
Try this, but instead of searing the meat boil it and use that as the stock. Then you cook it with the vegetables (just carrots and potatoes) and and season only with salt and black pepper. I swear to god, its some how better with less. Esspecially if you habe good meat
