  • 1 kilo COMPOUND chocolate, melted (i used beryls bittersweet)
    167 grams (3/4 c) water, room temperature
    half recipe:
    1/2 kilo compound chocolate
    83 grams water (3/8 c or 6 tbsp)

    ** i used 1 1/2 kilo of chocolate po since this is a double barrel cake. size 8"x8.5", actually enough naman na ang 1 kilo. kaya lang since di nice un shape ng cake ko po, kailangan ko syang habulin sa ganache. 🙈😆😊

    hi everyone, sharing AGAIN chocolate water ganache. again kasi, it's my first ever video here on yt. ganon ko sya ka love. and using it for yearssss na. 😊 i decided lang to make a more detailed video po for future reference lang din. i always use this under my fondant cakes. same ratio and procedure sa colored water ganache lang din po. but, chocolate is thicker than white chocolate po. fyi. 😊
    i can't say na tutorial sya kasi di ko din sya magawa ng perfect. just want to share lang kung pano ko sya gamitin for those na makaka experience din ng tulad minsan ng sa akin. i mean ung akala mong failed pero kaya naman pala.😊💕

    pag malamig ang weather, you can adjust ung ratio sa 5:1 instead of 6:1. mas mabilis syang tumigas pag malamig ang panahon or yung working area nyo po . since ang ganache ay made of chocolate, at ang chocolate ay naka depende naman sa weather if matigas or malambot. kaya adjust na lang po tayo. fyi lang para alam nyo pano ina adjust.😊
    use more liquid para mas soft. use more chocolate para mas matigas.

      @@sunflowergarden4215 moist cake po. mas dense. too rich sya for chiffon cakes for me po. ginagamit ko sya under fondant cakes or customized cakes. mas matigas kasi to sa usual ganache po.

    Hi mam. Tried using your water choco ganache. It worked perfectly. Mas lasa ung dark choco at mas gumaan buhay ko dahil mas madali i apply mas mabilis magset sa cake.. Thanks so much. Also using colored white choco ganache that i saw from your other video, mas okay kesa buttercream at less work😘

    Ang galing mo po talaga! 😭😭 Lopsided yung cake pero napantay nyo po. I hope I can be as good as you someday. Frustrating po for me ang pag frost ng cake. Struggling talaga ko. Di ko alam pano techniques and always lopsided ang cake ko. Natry ko na po yung colored water ganache. Mabilis nag thicken yung sakin kaya nahirapan na ako ispread sa cake. I used the same ratio po. Kaya lang maulan dn kasi nung gumawa ako. Thank you for inspiring us with your videos! Hopefully makagawa ka po ng vid about cakes, how to frost a cake.. mga ganun haha. Godbless po!! 😘😘

      naku ms.laurence, habang ginagawa ko tong cake na to paulit ulit kong sinasabi sa self ko na "ok na kasi ung shape tinapyas tapyasan mo pa." ahahaha. sa tagal ko po nag ganache, di pa din un pantay. trademark ko din in mga tabinging cakes po.😅
      mas thick pa ang chocolate kesa don sa colored or white water ganache po. pede naman sya reheat kaya lang pag nasobrahan kasi nag o oily sya. kaya pa din gamitin kaya lang if di pa sanay baka mahirapan po. pero kaya. freeze mo lang un cake para mag set un ganache agad pag inapply. pero wag tooo cold din kasi hirap nga if ang tigas naman. o kaya add ka warm water po. or adjust un ratio.
      awww. sana makuha mo in time po.😊

      jhoanienie mis jhoan gusto ko lang po ishare na malaking blessing po kayo sa baking journey ko po. ☺️ Kahit beginner po ako mahilig ako mag attempt na itinda yung mga natututunan ko since full time mom ako and need ng extra dahil si partner lang ang may work. Sa sobrang detailed po ng mga vids nyo madali ko po nasusundan. As of now natitinda ko na po yung sugar cookies recipe nyo with fondant topper na sa channel nyo rin ko nakuha. Pati water ganache nyo po pinapractice ko. Kahit yung choco fudge frosting nyo po nasubukan ko na gawin filling sa cake. Lahat po pumatok. 🤗 Maraming salamat po at may mga katulad nyo na hindi madamot magshare ng knowledge lalo sa mga katulad kong aspiring pastry chef pero hindi afford mag aral sa pastry school.       use double boiler sa pag melt ng chocolate po. make sure na hindi didikit ung ilalim ng bowl sa hot water po. then add water once fully melted na ung chocolate.🙂

      turn off na ung (low) fire pag almost fully melted na un chocolate. para hindi masobrahan sa init ung chocolate. chopped finely para easier mag melt po.

    Sobrang helpful ng mga inputs mo, because of this nakita ko ang difference niya with cream based ganache. Same lang ba ang ratio with white chocolate and pwede rin kaya yung chocolate chip if ever? Thank you

      salamat ms.geraldine. from cream based lumipat ako sa water ganache years ago na po. if tama tanda ko mas firm sya pag nag set. un downside lang is i think mas ma oily sya minsan. not sure if ako un mali o sanay na kasi. pero pede naman iwasan. lagay lang sa fridge and then mix lang. pero ayoko non personally kasi bilis din nya mag set po. hehe. sanayan lang po. 😊 un sa white chocolate is same ratio lang gamit ko. mas thicker ang chocolate compare to white lang. may video na po ako na share na white chocolate gamit. pero colored water ganache naman. optional naman un color po. nasa description un link po.😊 un chocolate chips. depende sa chips po kasi meron choco chips na mahirap tunawin. basta compound chocolate ok naman. pero more on bars po un tested ko po. 😊

      @@annefperez3604 awww. salamat ms.anne. 🥰 yes po. ang worry ko lang tlaga in time is baka di ko kayanin masagot lahat ng comments. medyo struggle na now kasi pero trying my best pa din po.❤️
      un sa ganache, nabasa ko kasi about water ganache yearsss ago na. tpos nagkaron ng time na wala talaga mabilhan ng cream. so in short, less worries kasi pede ang water. and sa result, mas firm sya base sa observation ko po. e more on fondant ko sya ginagamit kaya better if ganon. and longer shelf life kasi water sya unlike if with cream po.

      magkaaway ang water and "real" chocolates po. pero if compound chocolate pede sya i mix with water po. cream ang gamit sa real chocolate.
      di po sya natutunaw. if mainit panahon pede na mas malambot lang sya sa usual. ito mismo gamit ko under fondant po. nice for fondant un ratio na to.

      just enough lang na mag firm un ganache. no need palamigin ung cake. around 3 to 5 minutes lang sa freezer. pede din sa ref. minsan pag malamig weather, pede kahit di na i ref din.😊

      iwan mo na lang sa room temp ms.maui. mag m moist kasi sya pag ni chiller. or intayin mo na lang uli na di masyadong basa bago ilagay un another layer ng ganache po. matutuyo din naman sya.

    Hi Ms. Jho. Ilan beses na po ako gumagawa ng ganache pero di ko po tlaga maperfect using whip cream wla po kasi heavy cream dito. I will try this one using water.. ask ko lang din po kung ngdedepend din po ba sa klase ng chocolate ung magging texture nya??       salamat ms.carmela. use compound chocolate if watwr ganache ung gagawin mo po. para san po ba si ganache? under fondant din? ano nagiging problem nya? never pa ko naka try ng heavy cream. hirap humanap po eh.

      pede po. pero wag mo na i ref po kasi mag m moist un fondant pag malamig un cake. nag ga ganache ako ng cake khit 2 days advance po. wag ka lang use ng mga cream cheese filling or un madali masira po. 😊 ok na sya sa room temp po.

      @@cherrylpalado2828 depende sa flavor ng cake un fillings ko po. pero usually, chocolate ganache (not same nitong nasa video po, with cream tpos iba ratio), or italian meringue buttercream. sila un pinaka madalas po. minsan naman dulce de leche.
      un sa fondant, possible na too soft and/or too thin un fondant kaya ganon po. or mataas ba ung cake tpos nahahatak pababa ung fondant kaya napupunit sya. may video po ako how to cover ng fondant ang cake po. baka makatulong.😊

      hindi na po. pag malamig weather mas madali sya mag set. if ganon po, pedeng mag adjust ng ratio. kahit 5:1. para mas madali lang sya i smooth po. sanayan lang din and tantsahan depende sa weather or working area.
      pero ako po same ratio lang kahit malamig or mainit.

      baka nasobrahan na po syanng init kaya nag oily. meron akong white choco drip na ginamit sa ube cake na na share ko po. uhmmm. panong process ginawa mo po? pano minelt si chocolate and when sinama si cream?

Umpisa plang po mag melt ung white choco nag oily na sya . Low fire lang namn po 😞. Ung dati ko po kc gamit na choco droplets na walang brand name pro sa bking store din po bili ko hnd nmn po nag oily.

    Jho, is it possible to add a little liquid that is not water? I'm making a stout cake and since this recipe uses room temperature water, what if I added a little room temperature stout, keeping the ratio the same?

      hi. im honestly not familiar with stout.🙈 i searched for it and it is a beer? haven't tried adding beer with ganache but other than water, some use milk and even coffee. im just not sure with stout. sorry.
      use compound chocolate. 😊

      regarding ratio, it can be easily adjusted if ever the consistency will not be the same with this ratio. add more liquid to make it thinner. or wait for it to thicken if you want it thicker. or add melted chocolate if you want it thicker. or use more chocolate.

      hello po. uhm, depende kasi sa gagawa. medyo ma ganache kasi ako. if ako gagawa, maglalaan ako ng 750 grams for 8"x3" na cake po.
      stable sya sa room temp kahit days po. kahit di din sya i ref kasi mag m moist sya pag nilabas pero matutuyo din naman. kaya lang titigas sya lalo pag ni ref po. pede naman mag adjust sa ratio din depende sa consistency na kailangan.

      yes sa pang drip ms.jonna. kahit same ratio. wait mo lang un right consistency nya for drip. rest mo muna if runny pa.
      un pang frost, if mas malambot want mo, add more water. kahit 5:1 or 4:1. pero medyo firm pa din yan. upto you po.😊
