So, I wanted to let you know that you have inspired me to start cooking again. I was diagnosed with stage 4 colon cancer and just stopped cooking or really doing anything. I started watching your Videos a few months ago and am ready to get back into the kitchen. My husband and I thank you.
I'm sorry to here about your cancer. I have had crohns disease since I was child and I've had all but one metre removed over the years and the issues that come with it. I was being fed through my veins but every vein clotted and I could no longer be fed that way so even though it's painful I have to force feed myself. I wish you all the best and you will be in my prayers tonight.😊❤
Every time you mention using up carrots, I think of the Dutch dish Hutspot. It’s a dish of potatoes, carrots, and onions that are cooked together until tender, then mashed together with some butter, salt, and pepper. We always served it with a kielbasa type sausage. It’s delicious.
I'm from the Netherlands and carrot stampot is one of my favorit foods. We make all kinds of stampot with vegetables in the wintertijd. Always live to watch you. I love to cook too.

I totally understand what you feel. I'm terminally ill and most of my time is having to rest in bed or on the couch. I am constantly in pain but I also have some intense pain and it's been so bad recently that I've been in tears. I find that watching Becky doing all the things that I used to dream of doing distracts me from what I'm going through. There are other channels I watch but none of them are as good as Becky.

Becky 2 things…I heard you saying you wanted a pepper mill but didn’t want to crank all the time try The Peppermate. It’s the one Ina Garten and Jacques Pepin use and it’s great. I’ve had mine for years. The other thing is that I am in my sourdough era and I was really struggling with making my starter with no success until I saw a video of an old fashioned method that uses yogurt! I did it with a small container of Fage and after 8 months I was finally successful. Just add the yogurt, your fresh milled flour and filtered water until it’s a thick pancake batter consistency…leave it on the counter with a coffee liner on top and don’t do anything but stir it until it starts to grow. Trust me it will work! Love your videos ❤

Congrats on your TKR! I had both of my knees replaced earlier this year. Best decision ever! I have my life back. I also loved watching Becky's videos while I was recovering from surgery!

Sumac is one of our traditional native foods and I have always been very fond of it. Sumac is especially good with maple sugar. We have always harvested our own sumac, but it can be difficult to get it at just the right time before the bugs invade. I have a feeling the ancestors were not so particular about keeping the bugs out of their food. I love that you can get it from some stores now.

Sumac is the only spice that I ever use. I was watching a cooking show and they sprinkled sumac on a chicken breast and then another recipe for roasted vegetables like parsnip and cauliflower roasted with sumac on it. The focus of the episode was sumac. It took a bit of researching to find the sumac as it wasn't available in most supermarkets in my country but I found an online spice store which stocked sumac and also sweet paprika which you can't get at the supermarket either. You can now get sumac in some supermarkets. I love anything that has lemon or a lemon flavour for both sweet and savory food. In the off season months in my country lemons sell for up to $US12 a kilo which I just don't have the extra money for that. So when it's the right season lemons will come down to $US4. I buy more than I need and I take the time to use a peeler to cut off the peel. If any white pith is still on the rind I take it off with a paring knife. I then dehydrate them and then most of it I turn into powder when needed. I juice the lemon and freeze it in ice cubes. I then take the pulp and freeze that as is. Sometimes, I'll cut out each wedge to freeze in some lemon juice.
I am totally making that chowder! :) For anyone who wants less sugar in the sweet and sour sauce (because you do need it sweet) I've found you can sub half with glycine powder.

I love roasted vegetables. today we had roast chicken and vegetables cooked in one bake dish, it turned out wonderful and we had apple pie for desert in which I made the apple pie filling and crust made with butter, so it was nice and flakey.
Becky, I used to have the same kitchen aid as you and I recently upgraded to the tilt up bowl and I regret it. Having the bigger bowl isn’t worth the hassle of not being able to lift the mixer. Just wanted to share that

I love homemade chicken broth for breakfast in the winter with either Eggdrop soup or making dumplings or biscuits with it. Sooo good and hearty during the cold months 😊 all of these dinners look amazing.
Milled flour is wonderful with Naan bread too. You’ve been wanting to call your beautiful pita breads Naan. So just a heads up on Naan bread with milling your own flour(s) 👍
I think everybody should experience an afternoon summer rain in Florida. Being from California originally I thought the little drips and drops in all day rain was something. oh no no in Florida it can rain so hard You're soaking wet within about 5 seconds of walking in the rain. And the drops can be the size of an egg. it rains so hard windshield wipers don't keep up and you can't see. It's something everybody should experience at least once. It's almost entertaining.
I was going to mention Florida rain as I live in S Florida and when she opened her door, I laughed because it rains so hard here you can’t see the yard from the window.

We do a grated carrot and pineapple salad…. Tinned pineapple in juice and add as much of the juice as you want (depends how wet you like it!) - it’s delicious 🤗

You’re so good at this! I make certain things to freeze (I.e wontons, pierogies, eggplant parm, muffins, pasta forno) but I mostly cook start to finish daily.
I like to plan out my meals like you do. I laid out a couple pounds of hamburger, some roast, and a couple of different canned soup I canned myself to get things ready. Tonight I made homemade sloppy joes sauce and everyone raved about it. Said it was so much better than store bought. Roasted up some potatoes, and a couple different canned fruits. Perfect for a busy day of doctor visits. Roast and carrots for tomorrow. Thank you for inspiring me.

FMF TIP! I just discovered this from another influencer who is great with FMF…So, when you use hard wheat, if you find that it won’t windowpane and feels even more sticky after kneading, that means it may have proofed too quickly because as the Bosc kneads it with lid on, it’s a lot warmer. You’ll need to keep the lid of during the kneading phase.
I have learned when using whole wheat and high protein, fresh flours to add a couple tablespoons of vinegar to the dough or crush up a vitamin C tablet and dissolve that in the water, the additional acid helps the yeast to stand up against the heaviness of the flower and you get a much better rise

Walla Walla onions do not keep well, I learned the hard way, but I tried some onions from Gurneys seed Co. called Candy hybrid Onions, they keep beautifully and they don't cause you eyes to burn as badly as most onions do. give it a try sometime and let me know what you think! I have only been using Fresh milled Flour. What i have learned is not to put the yeast in the flour at first. Add your water and mix let it rest for 15 to 20 minutes, if you add the yeast it will over proof. If you don't add at first you don't have to worry about the time line of the autolyse time. . I watch Grains in small places she is gteat. Fresh milled flour dough will always be water the store bought flour, just put a little water on your hands when working with it.
Becky, why dont you use your kitchen aid to grate the cheese? You can grate several bars of cheese & put in Snack, Sandwich, Quart bags--label how many cups in each bag, then put all bags into a gallon Recycle- able & just take out what you need. I do this with 3 types of cheese. Such a time saver during prep time.

I mill red lentils into flour and add to bread mix to make it healthier . Chick peas milled to flour adds protein too.
The soup looked divine and I also don't eat till 10:30-11 AM. I am just not hungry when I first wake up, usually really thirsty.

I think my husband woul leave me for you if you promised to cook for him... he just walked through and said, "no, I wouldn't leave, I just want her to send me her food. Hey, A jar of uour marinara and I would be happy." I'm a fairly decent cook and I have his heart, but I guess you have his stomach. Good luck with that Becky. He's pretty easy to please, and at 77, he eats less than he used to eat. As I write this I am giggling like a little girl. It's fun! You're fun. Keep going girlfriend, you got this!!!
I love homemade chicken broth for breakfast in the winter with either Eggdrop soup or making dumplings or biscuits with it. Sooo good and hearty during the cold months 😊 all of these dinners look amazing.

I think everybody should experience an afternoon summer rain in Florida. Being from California originally I thought the little drips and drops in all day rain was something. oh no no in Florida it can rain so hard You're soaking wet within about 5 seconds of walking in the rain. And the drops can be the size of an egg. it rains so hard windshield wipers don't keep up and you can't see. It's something everybody should experience at least once. It's almost entertaining.

We do a grated carrot and pineapple salad…. Tinned pineapple in juice and add as much of the juice as you want (depends how wet you like it!) - it’s delicious 🤗
I love dinner for breakfast and breakfast for dinner 😂 I thought I was alone in this, makes me feel a little better to know I'm not the only one eating chicken and veggies for breakfast ❤

I like to plan out my meals like you do. I laid out a couple pounds of hamburger, some roast, and a couple of different canned soup I canned myself to get things ready. Tonight I made homemade sloppy joes sauce and everyone raved about it. Said it was so much better than store bought. Roasted up some potatoes, and a couple different canned fruits. Perfect for a busy day of doctor visits. Roast and carrots for tomorrow. Thank you for inspiring me.

FMF TIP! I just discovered this from another influencer who is great with FMF…So, when you use hard wheat, if you find that it won’t windowpane and feels even more sticky after kneading, that means it may have proofed too quickly because as the Bosc kneads it with lid on, it’s a lot warmer. You’ll need to keep the lid of during the kneading phase.

I have learned when using whole wheat and high protein, fresh flours to add a couple tablespoons of vinegar to the dough or crush up a vitamin C tablet and dissolve that in the water, the additional acid helps the yeast to stand up against the heaviness of the flower and you get a much better rise

You are right! Walla Walla onions do not keep well, I learned the hard way, but I tried some onions from Gurneys seed Co. called Candy hybrid Onions, they keep beautifully and they don't cause you eyes to burn as badly as most onions do. give it a try sometime and let me know what you think! I have only been using Fresh milled Flour. What i have learned is not to put the yeast in the flour at first. Add your water and mix let it rest for 15 to 20 minutes, if you add the yeast it will over proof. If you don't add at first you don't have to worry about the time line of the autolyse time. . I watch Grains in small places she is gteat. Fresh milled flour dough will always be water the store bought flour, just put a little water on your hands when working with it.
Becky, why dont you use your kitchen aid to grate the cheese? You can grate several bars of cheese & put in Snack, Sandwich, Quart bags--label how many cups in each bag, then put all bags into a gallon Recycle- able & just take out what you need. I do this with 3 types of cheese. Such a time saver during prep time.
