Based on how the signiture dish happened in season 17, it seems like the contestants let the producers know what dish they're making and what they'll need ahead of time so they have the ingredients in the kitchen. If that's how all the seasons work, it means some contestants request premade/canned stuff.

Exactly - good quality tinned tomatoes are usually better for making sauces than your average "fresh" tomatoes, unless you've got a kitchen garden or access to top produce.

But after a while I tried watching some of his other stuff, and find that he’s a genuinely caring dude. He just amps up the savagery for television. I’d recommend some of his older Kitchen Nightmares episodes, specifically the British version. He’s way more chill, and not always screaming. The one where he helps a struggling Irish family run a restaurant is a great example.

He’s not a bully he’s just a tough teacher, there’s a big difference between the two. He praises them when they deserve it but he knows that they won’t get anywhere just off of encouragement
It works for some people and not for others. For some it’s motivation to do better for others it’s a complete confidence killer and makes them enter into total dumbass mode, because they think everything they are doing is completely wrong, or worse kick off their defense mechanisms and make them confrontational or despondent.
He works this way with people who are telling him they know exactly what they are doing and clearly don't. On all of his other shows, he does not treat new chefs or people who are learning to cook simple meals this way. This is for chefs that have been, or should have been, to culinary school and lack basics.
