    HOMEMADE VEGGIE BURGERS RECIPE
    1 tablespoon avocado oil
    1 onion, diced
    4 cloves crushed garlic
    1 cup baby spinach
    2 teaspoons ground cumin
    1 teaspoon dried oregano
1-15ounce can of kidney beans, drained and rinsed
    8 ounces steamed beets
    1.5 cups cooked quinoa
    1 egg, beaten
    2 tablespoons coconut flour
    3/4 teaspoon salt
    1/2 teaspoon black pepper
    Pre-Heat oven to 350 Fº.
Heat a large non-stick skillet over a medium heat and add oil. Once the oil heats through, add in the onions along with a pinch of salt and cook for about 5 minutes, stirring occasionally, until the onions are translucent.
Add in the garlic, spinach, cumin, and oregano along with a mother pinch of salt and pepper. Stir and cook for a couple more minutes or until the garlic is fragrant and the spinach is wilted.
Shut off the heat and cool.
Transfer cooled ingredients into a food processor along with the kidney beans and pulse until everything is broken down. Be careful not to over-process the ingredients.
Grate beets using the large holes of a box growls to squeeze out any excess water and then transfer beets to a large bowl. Add in the ingredients from your food processor along with the quinoa, egg, coconut flour and some more salt and pepper.
Gently mix everything together and then using your hands, free-form 6 burger patties (each patty will be about 4 ounces) and place on a rimmed baking sheet that is coated with cooking spray.
Pop in to the oven and cook for 15 minutes on each side or until the patties have set up.
Remove from oven and grill for two minutes on each side or sauce in a non-stick skillet with a bit of avocado or coconut oil for a couple minutes on each side.
(If desires; you can also cover and refrigerate the patties once they are done baking and then grill when ready to eat.)
Store patties in the fridge for up to 5 days.
    Makes 6 burgers.

I knew if I waited patiently, this day would come. I am a whole food plant based eater, and have not yet come across a plant burger worthy of feeding my whole family. Soooo many trials and errors. I kept telling the kids...'Dani will help us one day'....it's become our veggie burger trail mantra. Dani, I made these last night. They are absolutely perfect!!!!! and everything we need (thanks for the egg elimination note). Thank you so much. And thank you from my two beautiful daughters and hubby :)

Happy Friday! After sharing my Summer Cookout Menu with you earlier this week, I wanted to be sure to get you this veggie option for all of my plant-based friends. These burgers are not only great for a cookout, but also work for your meal prep as well. I hope you enjoy them as much as we have. xo - Dani

Clean & Delicious Flax seeds are also great for binding and holding together veggie burgers so they don’t crumble. Maybe in a few months you can create a v2 of this wonderful burger recipe with them and test the hold 😊 Thank you for sharing, can’t wait to try them!

Thanks for the recipe...it looks yummy! I make veggie burgers, too! I made up my own recipe when store-bought didn’t satisfy my need for burger. I finely grind walnuts, mash 1-2 cans of black beans, in large skillet, sauté chopped onions, finely chopped mushrooms then season with salt & pepper. Combine everything in a large bowl & add chopped parsley. Beat 2-3 eggs in small bowl, add Worcestershire sauce, low sodium tamari soy sauce & any other herb or seasoning you like. Depending on my mood or what’s on hand, I’ll add cooked brown rice or oat bran or dry oatmeal, (or some of all 3). After egg mixture is incorporated, add rice or oats & mix well. Cover & refrigerate at least 2 hours to let it firm up. When ready to make patties, make sure it’ll hold together. If not, add broth, milk, ketchup or whatever you want to make it LOOK like burger meat.
Those who eat dairy, can also add shredded cheese if desired. I usually cook them on top of the stove, but baking will also work. You will be surprised how much these look like a grilled beef burger! The mushrooms make them taste like real beef & the tamari soy sauce & Worcestershire are great meaty-tasting condiments, too. This is a pretty forgiving recipe, too...no real measurements...you taste it as you mix it together UNTIL you add the eggs, then no more taste till it’s cooked! I’m definitely going to try your recipe, as it sounds amazing, but I know I’ll use black beans since they really make it look like beef! Thanks again! ❤️😋🐰❤️

If you have an instant pot or pressure cooker you can cook beets super quick. I add 2 cups water then a steamer basket and hit saute so the water heats up while I'm cutting the beets into 1/2 inch slices, once I've filled the steamer basket with the beet slices I put the lid on and cook high pressure for 9 minutes. Quinoa could be cooked in the liquid below you might have to play around with when you add it but you could definitely get these both done at the same time

I used a large beet when I should have used a small. Very heavy beet taste. Good thing I like beets.
I realize the beet is mainly for the colour so if you don’t like beets you don’t have to use them.
Tasty but I’d make some adjustments if I make them again.

Is there anything we can use in place of quinoa? And would oat flour work in place of coconut flour? They look delicious :) Also, what quantity of beets did you use?

Just happen to have some leftover cooked (local!) beets that need to be used up! Would draining some of the beet liquid and using oat flour work instead of the coconut flour? Thanks, Dani!

I'm sure it would. You will just have to play with the measurements a bit;)

that seems like an interesting recipe, I have made quinoa with chickpea burgers, but with beets and beans it adds a something extra to it. I must try it.

Hi Dani, these veggie burgers look scrumptious! Thank you for creating a veggie burger. I absolutely love this recipe as it is so healthy and can be made ahead. I have never seen a veggie burger recipe quite like this one. I appreciate how you taught us to make it so clearly. I was wondering if you could link the airtight containers you use? I really liked the sound that it made. Lately I've been noticing that mine are not as airtight as I thought they were. Thanks again and have a wonderful Memorial Day weekend! PS - your hair is looking fabulous! I think it even looks better than the day you got it done. XOXO

Dani, this looks amazing. I love the idea of not having to have meat protein everyday, so I really like having this option. I do have a problem, however; beans really give me a tummy ache. I don't love tofu. What could I use in its place?

I'm going to try that looks very delicious. But I think I'm going to put Just a Little Smoke sauce on it in the mixture. I think that will give it a grilled taste thank you

This recipe is a great one to dehydrate after baking them. Nothing in this recipe would go bad if properly preserved for long term storage.

  • @RC2214

Adding smoked paprika would be good as well and tamari coconut ominous or gluten free soya sauce

I get what you're saying, but I'm going to try cooking them on the charcoal grill anyway. Based on your advice I think the way is either to mix in a small amount of grated cheese and put them in a fish basket or possibly wrap the uncooked burger in foil and put it on the back of the grill till the cheese melts. This depends on how much they want to hold together so you're probably right, usually are

    • @TheDaikashido
      @TheDaikashido 4 ปีที่แล้ว

I tried it and the grated cheese/basket did work well, however its not worth doing. Since the spices already give it a smoky flavor, nothing was gained by grilling. Its in a basket you cant melt cheese on top (that was less of an issue because I used tj's goat cheddar which is fav now.) They came out just a tad dry. I didnt have beets or quinoa, in the future I would mix a little ketchup in that case but I'll probably use the oven since it carmelizes the outside which the grill didnt do.
