I know. It's ridiculous. It's as if they're telling you to forget about it and buy the cake. The thing is (I've been doing this at home for an upcoming birthday party), it's a bit of a hit or miss. You need to first smooth it on the top, then around the sides with your hand, all the while being careful not to tear the marzipan/fondant. Marshmallow-based fondant is more pliable and solid. than marzipan, and it won't be a problem if any of the guests has an allergy to almonds. Hope this helps!
