Hi Liisa Toivonen. It's just water, but as Juliet says, make sure it's boiled. It just helps things stick. You can also use Brandy/vodka, especially if doing a fruit cake. I just came across this video on TH-cam I don't know a lot about cake frosting. The frosting you put on that cake...does it actually taste good to have 2 layers of sweet frosting? Is it edible?
yes !!! of course it is edible. why would you put something on a cake that you can't eat ??? it tastes amazing. I grew up with this kind of birthday cake and I still dream about them.
Useful, but you are using a cake drum - its not so easy to hold a fruit cake weighing a kilo up on the fingers of one hand whilst you trim or smooth the marzipan.
Icing sugar to roll out sugarpaste? I learned you must use cornflour as icing sugar makes it all super sticky? No taste issues with cornflour I must add. Plus professional? With hair flapping around food?! Big no-no!

you can use either cornstarch or powdered sugar... cornstarch is smoother.
Not very hygienic with the hair flicking every were,tie your hair back.

Why do you put both sugar paste and almond paste on the cake? That seems over kill and also sounds disgusting to eat.
