    Thank you Rsarah. That was the whole idea of making the video. A good recommendation is to do a "trial run" of a single tiered cake before attempting a two or three tiered cake.

    You could easily make your cake 3 days before the wedding, depending on the type of cake you make and the filling. I would recommend using a moist, denser type cake that will hold up well. Also, be sure to completely ice the cakes in buttercream, right down to the board, so that they are completely sealed in buttercream. This preserves moisture and freshness in the cake.

    When you are decorating any cake,but especially a tiered cake, you need to position your decorations so that there are not evident seams in the front of the cake. By marking the back of the cake, I always know where the front is and I make sure the decorations are placed appropriately.

    The only reason I set the tiers to the back was for the design element. Everyone is familiar with cakes being stacked in the centered position. My concept was to show that a cake can be stacked in different ways to achieve a different overall appearance.

    To cover the three cakes and for molding you would need approximately 10 pounds of fondant and about 5 pounds of buttercream icing. This, of course, is all dependent on how thick you ice the cake and how thick you roll your fondant.

    We have a fondant chart on our website under Tutorials. The amount needed all depends on the size of tiers you are covering. If you are a beginner, purchase extra as you may not roll it as thin as an experienced decorator.

    You can either use a fondant rope or you can thicken buttercream with lots of powdered sugar until it is firm enough to roll into a rope by hand. Either will work well.

    There many more "finishing" touches I could have done on this wedding cake like joining the lace pieces seamlessly. My intention was to show that nearly anyone can make this cake and not worry about the minute details and still have a nice looking cake. So my answer is no, it does not have to be perfect to be beautiful,

    If your white fondant is too dry, you should switch recipes or try another brand. You usually cannot add anything to fondant to make it softer without ruining the properties of the fondant (i.e. Shine and elasticity) . You could try adding a little white vegetable shortening like Crisco or Trex and that may be enough to soften the fondant for you.

    I used a standard buttercream icing and did not thin it down at all. It should be firm enough that you could decorated with it in needed.

    If you use only fondant in the molds, the molded pieces tend to stretch out of shape very easily when applying them to the cake. The bottom borders would be fine to use all fondant but the larger side borders may be difficult to work with.

    You always have the option of kneading in a flavoring into fondant or gumpaste if you are concerned about flavor. But, I agree, most gumpaste or 50/50 decorations are removed from the cake when it is served.

    Very large cakes can be covered with fondant but it takes some skill. Once the fondant is rolled out the required size,roll the fondant over a large 3-4 inch diameter clean PVC pipe, then unroll it over the cake. It may take two people handling the rolling pin but it can be done.

    A buttercream dam tends to push out the sides and creates a bulge around the middle of the cake. The firmer fondant dam prevents that from happening.

    You can easily cover the fondant with gel-paste food coloring. I try not to recommend recipes or fondant as each decorator has their favorites depending on local humidity and taste preferences.

    Great video! Thank you so much for sharing. I do have a question: how long must you wait after laying the fondant before touching the cake? In other words, once I have made the second layer, how long should I wait before placing it on the first layer, since this requires touching the icing a bit?

      good question. If you do it right away, the fondant it still soft and can be smoothed again easily. If not right away, I like to wait for a few hours for the cake to settle and the icing to firm up.

    Fondant can be purchased from Global Sugar Art website or you can make it from scratch. There are many recipes on the internet.

    Hello Sir, much inspired and motivated by watching your tutorials..would like to try a tiered cake first time. Please could you help me how do i go about with it..i mean how many days prior to start ? If bake cakes 2 days prior or so will they turn out dry?     Hello Alan! Great tutorial!! On your buttercream icing, do you use any real butter in it? I am making my friends wedding cake next week. She loves my buttercream. I use 1 stick butter, then 1 1/4 cup of High Ratio shortening. She wants her cake wrapped in Ivory Fondant. Should I leave out the butter on this one? I loved the tip about using fondant roll to dam the cake vs. wide roll of buttercream. Let me know your thoughts. Thank you for your wonderful tutorials!
