Västerbottenost is extremly hard to get outside Sweden. Its an protected product and are only allowed to be made in 1 place (town of Burträsk in the county of Västerbotten ) Its an very hard cheese matured for minimum of 14 months. It has an rich mature taste. The Pie is extremly popular in Sweden But its also very expensive. For many people its a must to have at Midsummer or at the crayfish party in August. In Sweden you could use an matured prästost. (priestcheese) or an mix of prästost and parmesan. If you cant find Västerbottensost or afford it.
