i have a wood pizza oven and started making calzone i use tomato sause,normal mozarella,bufalla mozarella,ham and champignon. after oven i put some basil and tomato sause on top.

Yes, correct! The same pizza dough. For the Nutella also! And the temp is better 260°-280°. Im my case i used 300, but i prefer 260 for the Calzone. and 320+ for the pizza
The ham,salame and pancetta don't put it whole,cut it in cubes or else one bite and you have the while slice in your mouth. Also,the dough should be a bit thicker and it needs more filling. Sorry,I don't mean to criticize, It looks delicious though.

In Italy, even in Peru, the name for "sauce" is "Salsa"... (many American people think "salsa" means the dip used of chopped tomatoes, onions, cilantro with sal and lemon juice, simply because they have limited mind-sets. Grow up already

Good question! I use a flour called semolina to help with the sticky part
