I think "cortejo" here means procession. As in "cortejo fúnebre" (funeral procession). The procession being the three stars that acompany the sun in the design of the bandera filipina.

What's interesting is the Filipinos who migrated to California in the 1920's to work as laborers easily adapted to speaking Spanish with their Mexican co-workers. They were known as the "Spanish-speaking Filipinos" to their American employers as Spanish in the 1920's was still fresh in their minds.
