#20 - Fruity Whole Grain Bread Pudding: Reduced Fat, High Fiber Recipe

- Bread Pudding is one of my go-to desserts because it’s very easy to make. You can’t go wrong with bread pudding. Just mix all ingredients then bake. That’s it!
There are many recipes of bread pudding varying in the kind of bread to use, with or without butter, and the amount of milk and eggs. I stay away from bread base with very high fat content like croissant pudding. I also stay away from pudding recipes with lots of egg yolks and milk which calls for a steam bath baking. This recipe that I developed is very simple. No steam bath needed! It has more bread than eggs and milk. It uses whole grain bread so it’s high in fiber and fat-free condensed milk. Whatever low fat this pudding contains comes from the bread. In short, this recipe is a healthier version.
