#37- HUMMINGBIRD CAKE: A tropical treat with banana, pineapple, coconut and walnut.

- As a gardener, I welcome the sight of hummingbirds in my garden, hovering on flowers, sipping its nectar. They play with the water on my sprinkler. So when I came across a cake called Hummingbird, I got curious right away why this cake is named after these cute birds. There are several versions. One is the cake is sweet enough to attract these nectar-loving birds. Another one is you would hummmm after your first bite to this sweet, moist cake full of flavor and texture as you would expect with banana, pineapple, pecan or walnuts, coconut flakes as its ingredients, and then spiced with cinnamon, nutmeg and allspice.
Looking at the traditional recipe, you would expect it to be very, very sweet - the cake layer itself and the cream cheese frosting. I reduced the sugar and vegetable oil in my cake, and reduced also the powdered sugar in the frosting. I’m not a fan of cream cheese frosting but for tradition sake, I’m giving in but the cake is frosted very thinly as a naked cake.
Hummingbird Cake is known to have originated in Jamaica and was brought to the United States by returning tourists. It became a popular Southern cake after an adapted recipe was first published in Southern Living magazine in 1978. Since then it had become a classic Southern cake which they say that every baker should have in their cake baking repertoire. So here I am taking up that challenge!

@@mehjabeenjable3632 Hi, thank you for watching my channel. Yes, you can use a springform pan. This recipe is for (2) 10 inch x 2 inches round pan. A springform pan is usually 3” high so I think you can use (1) 28cm x 7.6 cm. Maybe with a little extra batter that you can bake in a small pan(?)
