Evaporated milk has proteins that give structure to the Moi Moi, keeps it firm while steaming resulting in a really moist creamy moi moi. The taste is also amazing🤗
I had to be really creative with the banana leaves. The first couple packets had to be redone, because they were too big. It didn't take too long to get the hang of it. I had just enough banana leaves for all the mix I made. I only had to wrap one packet out of foil, at the very end. I see why you need to have the stalks at the bottom. I never had to add water. I don't think I had too much water, just enough to cover the stalks. Oh, I used kale stalks, since my banana leaves had no stalks. Thanks for sharing this old way of making moimoi. I grew up eating moimoi and akara, so this is just what I needed to start my New Year off right.
