Pasta Puttanesca: A fantastic weeknight Italian pasta dish!

- Pasta Puttanesca is not only the one Italian pasta dish I cooked the most, but it is definitely also one of my favorites. Puttanesca pasta sauce has a powerful aroma with salty notes from anchovies, capers, and olives so as a sweet base from quality canned tomatoes.
The best thing about this recipe, however, is that it can only be made with ingredients from the larder.

Did you have Pasta Puttanesca before or *did you try this recipe?* Let me know what you like about that Italian classic and how the recipe turned out!
Have you already tried my homemade Chinese Chili Oil? Here is the recipe: th-cam.com/video/ObhHbg3acUg/w-d-xo.html
I've never tried it but I'm sure I'd love it for it looks so savory just like I do my cooking, simple but yet very savory. Thanks!
I have made pasta puttanesca several times and it is very delicious.
@@solitaris7181 that's great to hear. I'm also a big fan of simple but hearty cuisine, and I'm sure you'll like this recipe.
@@jane-cn6nd awesome 😊👏 thanks for the comment Jane
Are those kalamata olives
As an Italian, I fully approve of this recipe. If I may, being that we eat pasta almost every day, I would go for half the oil if I cooked it often.
My recipe exactly. Looks great.
Really does look fantastic
Great pasta dish! All the good ingredients!
Looks fantastic
Such an underrated dish.
It really is my favourite pasta dish!
That looks so gorgeous
This has always been with the masses.
I made this yesterday! May have used a bit too much olive oil, yet it was out of this world YUM! Thank you
Discovered this recipe 8 years ago! Most underrated pasta dish! Hands down
Cheers from San Diego California
Definitely a rather underrated pasta dish, especially considering that you almost only need ingredients from the larder
This is my favorite pasta dish.
Love that you filmed the water boiling when it looked foggy! Feels like I'm next to it
That looks just right. Delicious!
That's kind, thank you Mika!
Looking forward to making this for my family and trying it out!
Make an extra 1-2 portions Steven. They might want a refill 🍝😋
That looks too good yum
Bravo, I'm from Rome and that is a correct puttanesca
Happy you like it Patrik, thanks 😉
Now that's great pasta!
Gorgeous presentation!!!
Thanks Michael! Glad you liked it
I like how that was finished in the pan. Very nice. Thank you.
Thanks to you for watching Carl 😊
In Napoli we make an even simpler version: no anchovies, and instead of parsley some very little oregano. Also you can experiment common variations with tomato puree and even with fresh tomatoes
Hi there! Thanks for the comment. Yes I already heard about these versions sometimes. Need to try that one day as well 😋😋
Made this tonight and it was really delicious!! Thank you for this video.
Hey Jules, awesome! Glad you liked the Pasta Puttanesca, I'm really craving one right now too 😅😊
First time trying the recipe, and very good and simple! Saw this video today and had to try it. Will be my staple! Thank you!
Fantadtic! Happy you ended up with a yummy pasta 😋 Yeah Pasta Puttanesca is great and super deliciois for the fact that almost only staples are used.
High quality video, easy to understand.

I've been living in Italy for 25 years and I'm a chef....well done that looks good ..I could add a few tips but very well done...
Happy to hear that from a chef. Thanks Nathan!
Feel free to add those tips...
You know that single fullstops are perfectly sufficient to separate sentences, don't you?
do they use too much olive oil ? 80 ml seems excessive
I just prepared this dish, following the recipe exactly as written with the exception that I only had crushed San Marzano tomatoes rather than whole. This was so delicious! Thank you for sharing this great recipe.
So happy to hear you tried the linguine puttanesca recipe and that you liked it 🤩 thanks for your opinion and happy cooking!
My favourite pasta. I generally make enough sauce for three meals, it is so concentrated, so I have almost always one or two small boxes of frozen sauce to make a fast pasta. While the pasta is cooking, the sauce is thawing in the saucepan so I litterally have a delicious and easy dish ready in 10 minutes.
Always great to have some spare sauce to warm up for a quick and delicious dinner 😋
World delicious and spectacular recipe ever & ever
Thanks Salman! Indeed a delicious pasta 😋
Oh bruh this looks delicious!
i like the style of your video. keep it up. subscribed. look forward to see more
appreciated my friend, thanks for being on the channel! Have a great day
Thank you very much.
❤❤❤❤❤one of my very favorites well done👍
Thanks man!
*Loved this, super easy, step by step just like if you're are doing it, not overly aesthetic like unrealistic, to the point.*
Thank you! happy it appealed to you
It looks good. Was it good is what i want ti know?
And the music?
... if you* are ...
Wow! I subscribe to many cooking channels but this is the first one that really makes everything clear. Are you a chef? Your chopping skills are excellent, and your prep seems to be right on the money. Put together a Chinese Di San Xian and a cheats Mapo Dofu and I'm totally onboard!
Thanks a lot mate! No I'm not a chef, just cooking almost every day since I was a teenager 😉My Mapo Tofu recipe is actually on the waiting list. I'm sure you might like it. Happy Easter my friend!
great video ty very much. thumbs up :)
Wow, nice recipe dude subscribed.
Thanks for joining the channel mate 😊
i always add fresh lemon juice at the end. toasted breadcrumbs are nice, too. and haters be damned, a light dusting of good parm or romano is nice, too :P and if you want to bulk it up a bit, add some nice olive oil packed tuna. that becomes more of a pasta al tonno
Lemon juice sounds great as a fresh, lemony kick, and parmigiano makes better almost everything right?! 😉😊
I like using sardines and topped with breadcrumbs. It's good with a little arugula too
I make mine with roast chicken, peas and potatoes. Not the original recipe but, in keeping with the zeitgeist, if I call it putanesca it's putanesca. So there!
I ‘m going to try adding your extras next time, hard to improve this dish but yours sounds wonderful.
Great editing and video quality. Paid way too much for my mom's takeout tonight and said enough, I'm making it myself from now on.
Lovely videography. I'm hooked. Ill make my own spaghetti.
Thank you, and have fun cooking! 😉
Yum!
Hey man, this is by far the best video i hv seen on how to prepare "Luiguine alla Puttannesca" look so delicious. Keep up the good work my friend, don't listen to haters...This is the way💪😜
Many thanks buddy! 😊yes I will! I can't tell you how much I love doing these recipes. 😊 Have a great day!
Very yummmy pasta :) Like for you : I wish you a wonderful day : Greetings from Poland
Hi my friend! Thanks a lot 😊 Indeed a very savory and yummy Italian treat 😋 wish you a fantastic day as well! Greetings from Bern
Nice!
I does not only have to be for weeknights 😀
It is quick to prepare. According to the story of its origin, the putanas made and ate this between clients.
Great presentation- I can almost smell and taste your dish! Yum 😋
thanks a lot! happy it makes you hungry 😉
🇧🇷 *BRAZIL* 🇧🇷 Brazil loves pasta.
I’ve made this but I prefer Kalamata olives. This looks amazing.
I also use Kalamata olives most of the time as well 😋
I make this from time to time, but I add more garlic and anchovies and on slow heat so that the oil is thoroughly infused, only kalamata olives and a lot too, and then comes the chilli flakes. Those heat your mouth at first, but not that much. I use either dried chipotle or fresh habaneros ,de-seeded and a bit of the pith left. Parsley, more than that, but fresh tomatoes, the tins are good, but if you grow yours...as for the wine, that's your choice 😉
Your pasta's look delicious!
Happy to hear Peter!
Hope you’re well my goodness haven on one plate thank you enjoy 🍷🌈💖🇦🇺🦘🐨👍🏻
Keep going like this
Thanks buddy. I will, fully motivated and ready for the next recipe 😋
Well, that's dinner sorted. Thanks 😁👍
Hi friend! I'm sure you'll love this flavor-packed pasta recipe 😋
I just made this first time and I needed something quick! Also 🤞🏽hoping my Son would like it because the combination of ingredients were unusual to him but I recognized this would be a hit from eating at high end Italian restaurants in San Francisco CA! It was a hit because he went back for large portion for seconds. I did make some changes such as no anchovies, 1/2 portion of
Capers & black canned olives; used crushed tomatoes because that’s what I had on hand making it almost too tomato’s taste so added small amount capers; I will next time use less VOO in the pan and I forgot dried parsley (it was all I had) PHEW! Sorry I just had to share that a 73 Native American Elder with my pantry anyone can thank you,Cecilia
I'm in.
Subbed.
Thanks for beeing on the channel Joe!
I like this channel. Beautiful video editing. Also, it's not like a lot of food channels that feature some dorky foodie totaly ruining the vibe with his/her obnoxious personality and lame jokes. Chapeau.
Much appreciated my friend! glad you liked it. Have a great day!
nicely done! talk about saltimboca!
Appreciated Victor! Oh Saltimbocca 😋It's been a while since I had some. Would be fun to shoot a video about that when being in Italy next time 👌
@@flavorthoughts i love italian food, maybe you could do an entire series...go by region, i.e tuscany, piemonte, etcc. in my previous life i was a chef...it's nice to see cooking with feeling. keep on truckin!
Hmm, where is the cut of roast beef? Count Olaf would've not approved of this. I certainly would though.
Lock the baby in the tower!
Roast beef which is french for beef that is ROASTED!!!😂
Well what in the Lemony Snicket are u talking about 😏😁
Making thiiisss💕😩
Have you thought about already pitted Kalamata available at the supermarket?
Yes I used those several times as well! 😋
Are you from Italy? If you're not, i bet you're really closed!!! Bravo!
... really close*
I love italian. Pasta. Putanesca ! Even earlie for. Breakfast. ! ❤❤❤
ikea cooking table ! i have one 🙂
well recognized mate 😊
Looks great but one question, why not green olives?
Good question Mark! Traditional Puttanesca is made with black olives. Maybe because they have a richer, sweeter (more complex/ripe) taste than green olives which are more on the bitter-sour, salty and fresh side. Or because they were more readily available in the pantry in all seasons. If anyone has a more detailed answer, I'm curious too! 😊
nice vidio say hello frome indonesia
Thanks for looking by buddy 😉👍
Some cayenne pepper and/or chili powder works fine if you don't have chili flakes at home.
Also, this dish is a lot tastier if you add in a mix of green and black olives.
looks great but less parsley though
Why don´t you take the oil from the anchovies to fry them!? Seems to me it must be full of flavour!
Let say that anchovies+cappers+black olives+chili give a very salted final result and, considering the amount of garlic you showed, not an easy digestion, actually. As from the historic recipe (1930, probably from the island of Ischia) anchovies are an option. A good compromise could be to reduce (to half?) those ingredients except tomato/parsley. But, as always, "up to You"... Buon appetito
Anchovies and capers should always be properly desalted before use. Otherwise, the saltiness would be excessive.
favourite with Spaghetti/Linguine al Nero di Seppia 🤌
😋😋
Is this serving for one person or more?
Hi there 😉You'll find the answer here th-cam.com/video/i30XVDhcqxU/w-d-xo.html (normally for 2-3 persons)
The dish looks great.
You should get portable gas burner instead of electric. I noticed it takes a long time for the pan to come up to sizzling temp and most dishes can be cooked way better on gas burner.
Just switched to a gas burner a few days ago as I prefer cooking with gas. The main reason though was not the speed, induction is super fast, but more that my induction plate I used was crazy loud cause of fans. So the next video will be with a gas stove. Looking forward 😊
You haven’t used the newer electric ranges , they get hot really fast .I’ve used both gas and electric , there’s no difference.
Can I have the model of that pan ?
Hi friend! It's this series of Pans, not exactly the same model as my one but the same kind and brand with the metal handle: amzn.to/43LS7lV

Hi Steven, thanks for your message. I just tested the link on several plattforms, should be working. It's the one in the description you clicked right?

can I make this without anchovies or does that ruin it then😅
Same question lol.
They add an special, not instrusive flavor and "umami" taste to the dish, bit lets say if you never had Puttanesca and you make it without anchovies, you'd still end up with a super delicious pasta anyway. I also covered the point with anchovies a little on the blog. So if you don't like the taste of them on its own, you could just use as little as 1-2 anchovies and you probably won't recognize them as the "anchovie taste" in the pasta then. 😊
@@flavorthoughts Thank you! I ask with a vegetarian in the home. Will try without.
You can avoid the garlic getting bitter by adding it later in the process here.
You can avoid the garlic getting bitter by proper heat control, just like he did. If you don't know how to cook, it's done your way, and that's totally wrong.
@@williamfotiou7577 Most viewers don't have culinary experience Jack.
I do the same recipe but use orzo instead of linguine.
Never had it with orzo before, but sounds interesting! Like a creamy risotto texture 😋
It’s great summer meal with a side of a citrus dressed salad..
Nicely done but buy a bench scraper, scrapping the edge of your knife against the cutting board will dull it. A bench scraper is a game changer.
Or just flip your knife, using the non sharpened side...
I've got a bridge to sell you
Pecorino or parmesan?
Nothing needed actually, but nothing wrong to finish with some lovely parmesan. I would probably go for parmesan as it is less salty compared to pecorino and the Puttanesca normally has enough salt from capers, olives and anchovies.
👏👏👏🥂👍
Thank you! With all respect, I think the oil is a bit too much. It's better to saute the ingredients, not fry them. Of course, it's all a matter of taste.
Is sticking your finger in boiling oil part of the cooking process?
😅👍
I like onions in my puttanesca but otherwise looks like a pot of sexy. 🤤
Yeah I'm sure they also go well with it. Getting hungry just writing about puttanesca again 😋
Great vid, good luck with the channel. Moar please
Thanks a lot Andrej! There will be more tomorrow 16.4 😊
... more*
I’m sure it’s okay, but a good Puttanesca should be made with oven roasted tomatoes and a lot more Kalamata olives.
Rookie
I bet muscles would be great to add as well.
My Aunt would do this recipe with stuffed calamari
Not this exact recipe but puttanesca
Garlic isn't in the actual end dish tho.
really cool! but I hope a bit of constructive criticism is welcome? it's the music bro. Your video looks well-made, but the music choice made the vibe felt like I was watching some buzzfeed junkfood video.
i don't like tomatoes. can i add something else
Just leave them out.
That peeled tomato at 4:51 looks very suspicious
Don’t add salt till the end, “IF YOU NEED IT”
