      It's actually refreshing seeing someone take their time to talk about their food in such a classy and elegant manner. Nowadays it seems like everyone is on a rush to through as many ingredients as they can into their pans or cooking boards and it's just so tiring and uninteresting. The editing skills for those videos must be awesome, but what's with the rush? Like calm down a bit and let us enjoy the cooking. And it's not that I'm old and can't keep up with the videos, I'm just 27. But I remember the cooking shows I grew up with in the tv in the early 2000s and you do miss the love some of those men and women had for what they were doing.

    It's funny because the fewer ingredients, the harder it is because it usually requires better technique, while having more does offset it a bit, and makes it possible to cover

    I had carbonara for the first time when I went to Rome and I dream about that dish it was so good. Probably the best thing I ate on that trip next to the cannolis in Sicily

    I made Pasta Amatriciana for date night with my partner after seeing this video. I made homemade pasta and sauce and everything. So glad I got to see her smile after the first bite. Cooking brings people together, i suppose! :)

      Grazie Mille. Yeah. Haha. Those are the same ones who can only recognize Parmesan from the rind and didn't realize that pecorino Romano was on top... hahaha. It's funny because I made a video ONLY using pecorino and a bunch of people got mad and said the better way is to use a blend. You can never win. 🤷‍♂️

      I mean, some old cooking recipes also tell you to combine pecorino and parmesan in half equal doses of what either of em would be stand-alone. But either way, anyone chooses their preferred way to make it overall!

    The longer I cook at home the more I appreciate simple pasta dishes like these. It's not always a toss up between a red sauce and a white sauce like when I was a kid.

      I can recommend dried mushrooms if you ever need to toss something together. I store them in jars.
      When you need them:
      🍄 take a hand full and toss them in hot water for 10 min.
      🍄 Take them out of the water and squeez the water out
      🍄 Sear them with some butter, onions and garlic
      🍄 When they are as brown as u like add the mushroom water and reduce the broth
      🍄 Toss the spaghettis in and put some Parmesan over it

    Fun fact: Mac and cheese *did* study abroad for a semester in Rome! In the 1700s rich British men would tour Italy as a stylish cultural experience and brought bac Macaroni as one of their favorite treats. These men were often derisively called "Macaronis" which is where the line in Yankee Doodle Dandy came from.

Be sure to try some real Roman style pizza too and enjoy the amazing pastries at local bakeries. Stay away from the tourist areas when you're looking to eat and you're guaranteed to find great food. Trip Advisor is great for finding places, look for reviews from locals or just ask the locals, they're usually super helpful and happy to share their favorite restaurants. I recently returned from my stay in Rome, it was absolutely amazing. Enjoy it!

    This short proves my theory that Italians are too protective over their pasta. Getting upset over ketchup on spaghetti is just absurd, it is all the same shit with little changes.       Unfortunately pasta existed from Etruscan era, so you are wrong.
      Modern-pizza was created near 1700, but romans already had “panis focaccius”, a flatbread with toppings.
      Yeah, tomatoes reached Italy after America was discovered. Then they created dishes with it.

    Then there's Fettuccine Alfredo, the younger cousin of the 4 Roman Pastas. Created by Alfredo Di Lelio in Rome, in the early 1920's. The most simple ingredients of them all, but hardest to perfect. Butter, pasta water, and Parmesan Cheese. That's it.

    I love all of them! Unfortunately you cannot get them at a Restaurant here in Germany. The only one of the four on a menu would be Carbonara, but it's always made with cream ( and probably with ham instead of guanciale)

    Italian immigrants brought cacio e pepe to US, they just didn't know how to make high quality cheese so they had to settle for inferior cheese and invent americanized name for it.
