Charles I always use manual mode for panoramas and indeed a lot of photography. The z6ll is so good that it allows this I recently shot a panorama of the Turkish coast from a cruise ship hand held. The only thing I would add is using auto iso in more difficult light. Like you weather here in uk warm as spring in late autumn!!
I have tried Auto-ISO and I had a similar result to either Shutter Priority or Aperture Priority. I didn't add it in the video as I wanted to keep it simple for new photographers.
