Your butter tarts look really good-I spent a lot of the money I made as a young paper boy in Saskatchewan, Canada, on butter tarts. I liked how you used butter in your pasty (rather than lard). I also liked the way you made your pasty-by hand with a pastry cutter and a bench scrapper (with much better control of the size of the pieces of butter than you would have using a food processor). Also cutting the cooled dough into 12 smaller pieces and then rolling out each piece was a great idea! Rather than using a cookie cutter though, I think I'll try using the whole small round-a little rustic looking perhaps, but I'm OK with that. And how wonderfully Canadian of you to use maple syrup-I just love it. Thank you so much, Wendy.
Great recipe as always. I would say that the traditional Ontario ones are made with walnuts, not pecans, and are usually made with either raisins or walnuts, however, I like your variation to mix them. One tip that I found made a big difference was to soak the raisins in boiling water until they puff up before adding them to the filling.
