Love love love this! Made it a few times but I always struggles with the pastry. I leave it is the refrigerator longer minutes, then tried longer but I still have a hard time keeping it together. Always seems to have cracks and doesn't hold together well. I use all 8 tablespoons of water. Not sure if because I am in a dry environment in Arizona. I have the same issue when I make pie crusts and end up putting more water than they say. Any suggestions would be great!

Geraldyne, you need the butter to be cold from the fridge to get the flaky texture to the pastry. You could skip the cheese if you wanted.
