Great question! I think either way would be delicious. If going in the pan seared direction I would use a heavy cast iron pan to create a nice tasty crust. If someone wanted to use the grill I would build the fire as big as possible with some hardwood to make nice long lasting coals then work the fire to put out the flame as soon as possible then put on your steak. If it's quite thick I would place a bowl or small pot over it to keep the heat up to insure being able to finish without adding fuel

wow, don't think that fire lighting trick will work in western washington... pretty dang cool indeed! could always add a fraction of a fireplace insert brick at the bottom to absorb the heat... for low heat I just feed it 3 branches as spaced out as the 1st is near done burning the third gets added they are about the length and size of your thumb and you just keep adding them until your cook is done... problem with using wood is gasification... stove heating up the table? if i was going to try an do a low temp i would remove the ash pan and get the fire started a bit more than i would need then add the ash pan on top of it like your using the pan for solid fuel tabs then have the grill plate at the very top. id bet your temperature control would be much better for your baking id also add a silicone cooking mat so you dont burn while baking, the mats are light weight fold able cheap and a must have for cooking. they really help a lot to minimize burning just dont put them directly on an open flame are you still doing any discounts i see that you used to give out at checkout?

When there is no flame only hot coals it departs much less flavor unto your food then when you have flames therefore smoke.

might want a towel wiping your hands on your pants while cooking is a cleanliness violation.
