Honestly, not much. For some reason Costco sells the blade tenderized meat cuts cheaper than these packers. I prefer to not have the tenderizing done, and this seems like the quickest way to buy their beef and have that option.
Good tip about the edge of the bag and keeping it dry. We always have a problem with that.

I won't eat it at 145 . Yuck 120 very rare for me.
