I feel you, this man inspired me to become a full time nomad and a slow traveler. For last 3 years I've been living out of suitcases and enjoying every bit of it.
Having noodles late night with an ice cold beer with your friends is one of the greatest pleasures in life and it makes me happy to see this episode wrap up the same kind of way. I really miss you tony. You gave us an authentic window into the wonders of food and culture around the world but you also showed how special food brings us all together regardless of culture.
Tony the Elitist people,chefs, and woman did not care for you the way the average person loved your company. You entered our hearts through a screen and we will never forget you.

When ordering the papaya salad you can specify exactly how many chili peppers you would like them to use to arrive at your perfect "heat" level. It will usually take several attempts before you get it right. Most Thai people use many more chilis than I do.

Not really, Issan sausage are not like western sausages tastewise. These are heavy on the aromatic herbs and spice. Earthy and herbal. Sub the bread for sticky rice and the mustard for nam prik. 👌

Have you spent time in a professional kitchen and if so are you still in it? I'm 47. Graduated culinary school in 94. And learned how to into any kind of culinary situation and thrive. We drank after till wee hours. As he did. I say, person like Chef Tony and I are kindred spirits. Lol
