HOW TO COOK PARTY JOLLOF RICE: NIGERIAN JOLLOF RICE | SISI JEMIMAH

  • Decided to record and post a longer video with audio instructions as requested by a couple of people.
    This recipe feeds roughly 20 people
    Ideally, your Jollof should turm out drier than mine. I made mine on a pretty small electric hob (so I could record the video), the heat wasn't high enough to properly distribute throughout the pot. Ensure the base of your pot fits the hob you're using.

    INGREDIENTS:
    3kg Long Grain Rice (500g will burn...lol)
    9 Red Bell Peppers
    3 Cans Plum Tomatoes or 12 Medium Tomatoes
    6 Scotch Bonnet Peppers
    4 Cups Very Rich Meat Stock/Water
    300g Tomato Paste
    6 Onions
    700ml Vegetable Oil
    Big Chunk of Ginger (eyeball the size shown in the video)
    6 tsp White Pepper
    6 tsp Curry Powder
    6 tsp Thyme
    Butter
    8 -10 Seasoning Cubes
    Salt to taste
    Extras:
    2 Onions to fry tomato paste
    2 Onions for garnishing
    4 tomatoes for garnishing
    INGREDIENTS FOR 6- 8 PORTIONS:
    4 Cups Easy Cook Rice
    3 Big Red Bell Peppers (Tatashe)
    1 Can of Plum Tomatoes/ 4 Medium Size Tomatoes
    2 Scotch Bonnet (Ata Rodo)
    1 cup Beef or Chicken Stock
    120g Tomato Paste
    2 Onions
    150ml Cooking oil
    1 Tbsp Butter
    1cm Ginger Root
    2 tbsp Curry powder and Thyme
    2 tbsp any seasoning of your choosing
    3 Knorr Chicken cubes
    2 tbsp White pepper
    3 Bay Leaves
    1 Medium Size Tomato for Garnishing
    Salt to Taste

    You have a very soothing voice and I love it. The audio gives more clarity to your actions, like when you explained that you added that much onions because you love onions. Someone who is new to jollof rice and wants to try your recipe wouldn't know the amount of onions is a personal preference and might be put off from using your recipe. Good job! So keep the audio coming

    I think you should only do audio for complicated recipes and for easier ones the other technique works!

      Its doesnt. This is because jollof is ussually steamed to cook and has more of oil covering it that water. That's the same reason you could leave a well cooked jollof rice out for long and it remains fresh.

      Unless your rice wasn't cooked(fried actually) with enough oil, it won't go stale. My rice can stay out on the hin for days without going stale.

      Cooking rice doesn’t need that much oil. I was surprised to see all that oil. Naturally fat makes everything taste better but you don’t have to add that much if you don’t like. The most important thing for rice is the amount of water!

    The oil was needed in the beginning because of the high quantity of rice, it lubricants the other ingredients . Alas the butter portion was small. The food looks good though 👏🏻

      Butter quantity depends on the texture of the rice. This particular one didn't dry out too much so I didnt need much. If it had been Sella Basmati or some other brand, I'd have probably needed the whole tub.

      You can't use just Tomatoes for Jollof, you definitely need Bell Peppers or the long Tatashe. Butter quantity would depend on how dry your rice ends up after cooking. I add more for Sella Basmati rice, less for long grain.
