I grew up in Texas. Several decades ago I went to the Czech festival in a little town called West. West is located south of Dallas-Fort Worth, in central Texas. They were having a chili cookoff, and each team entry had a snappy name for their concoction. I took a few samples but passed on the one called Goat's Head Chili because I was full. Not ten minutes later as I stood at another booth I turned around to see the GHC team lifting something out of their cooking pot. It was a goat's head. That NEARLY put me off chili altogether.
LOVE IT. Nailed it, too LOL. I learned from my dad (C.V. Wood bought from him) who learned from his uncle, who learned from his dad who served it first in 1911. Still being made today. Dad judged cook-offs since early 80's and I went to a lot of fun ones. The worse thing is to come upon a cook-off and everyone is just doing their thing and being quiet with no decorated booths at all. Your spirt warms my soul.
my father was a canadian and my mother a good old cali fire belly so my dad made chili that ate the bottom out of the pot great song reminded me of it keep em coming yall
