this looks delicious. i'm 69yrs old and my mother always just sliced the squash with sliced onions, added butter (probably margarine), salt and pepper, and cooked gently. it made a little broth that was good with cornbread. just heavenly. do you remember that? (our food in texas is so like yours in alabama!)

I cook mine the same way. Instead of using crackers, i use stove stop stuffing crushed. and cream of chicken istead of cream of mushroom
