There I buy Hokkaido, Butternuts and Sweet Dumplings. Then I stand for days in the kitchen to cook soup and other glories, which are then awakened or frozen. I still get chilli, which grows well on the terrace. But not that it lifts my skull. Your recipe, dear Vivi, I will definitely try out when there are pumpkins again. I'm looking forward to it now. Thanks for that. I have a couple quarts of curried butternut soup in the freezer that I made when my last squash started looking dodgy. Tastes alright but turned out unappealingly thin.....I'll be adding some red onions and chick peas. Yum!

Looks yummy have a question when I was little and lived in Scotland i remember having the curry from the take away Chinese I’ve never been able to duplicate also the sweeter curry you got at the chippy omg now I’m salivating I miss those could you perhaps shed a little light on what they may have used ingredients wise or preparing I know that those are not your stomping grounds lol but perhaps a friend might help oh timeline eeks 43 years since lol luv from Ontario Canada 🐝
I think it is best from fresh squash........I find that squash which has been frozen looses it's texture so I tend to use the frozen stuff for soups/blended things..........if you have a go from frozen and it works out ok let us know. :-)

If not it's worth the investment as it's awesome for people who will get home tired and don't want to cook but still want something warm/hot for a meal. Here it is Autumn and I'm looking toward making this again. Vivi, how would you describe your tomato product? Is it a sauce or more of an uncooked puree? I am not sure how to equate what I process with your frozen goods. Normally, I do either roasted passata or diced tomatoes.
The frozen tomatoes are as 'natural'as I can keep them to give me flexibility later when cooking with them - so, I skin them and blitz them in the blender (purely for space as, blitzed down, I can pack more in) and freeze them in 500 gm portions which roughly equates to a tin. I do sometimes roast them but prefer them like this for the flexibility. :-)
I let mine dry on the plants and then harvest around the end of September to mid-October........but the mice beat me to it last year! I hope you get a great haul. :-)
I don't cook in the summer, never the oven any way. Have you thought of using a slow-cooker or Insta- pot? If I were you, I'd make double or quadruple batches and freeze them. Saying that , I do cook quick items, or use the bar-b-q.. Since I like to bake and make my own bread, I bought an elec. oven to use outside … but it's still in the box. : ( As for curry, It's not as popular in the states as in the UK. We do have Indian Restaurants but its not as big a thing, we take out pizza, fried chicken, or Chinese mostly. I do use Turmeric in so many other things. If you're buying coriander, just grow it, it's like a weed . Hey! That's for dinner! OK Vivi, just back away from the bowl.
I tried this today and was so amazed! Thank you. It reminds me of something I would order from a takeaway or a restaurant but can't decide what.

I don't have a slowcooker.......space is an issue for me and I like to keep things super simple with just a couple of pans and dishes. :-)

It's an enamelled, cast iron pot......very like those you can get form Le Creuset......except this one was about half the price!
